No Bake Monster Cookie Bites are the perfect snack that will not only satisfy your sweet tooth, but also give you a burst of energy and keeping you feeling full until your next meal.

These small, snack size balls are made from oatmeal, peanut butter and bits of chocolate. Then they are put in the refrigerator or freezer until they are nice and firm.

Then pull one out any time that you need a quick snack in between meals. Or make extra and store them in the freezer making them the perfect grab-and-go treat for whenever you need a quick pick-me-up.

I love to make these around Halloween and serve them as a part of a fall themed party. In addition, I also add them to my holiday cookie trays every December to compliment the other, more traditional Christmas cookies.

  • Quick oats: These are the base of the cookie bites. Quick oats are smaller and more finely processed than traditional rolled oats, which makes them easier to mix into the dough. They also help give the bites a slightly chewy texture.
  • Creamy peanut butter: Peanut butter acts as the binder for the ingredients and adds that classic nutty flavor. However, it’s important to use the classic peanut butter that you find at the grocery store. This is not the time to use all-natural peanut butter as they don’t hold the monster cookie bites together as well.
  • Honey or agave nectar: This is the sweetener in the recipe. Both honey and agave nectar work well because they’re sticky and help keep the ingredients together.
  • Mini M&M’s and mini chocolate chips: These little bites wouldn’t be called “monster” cookie bites without the colorful addition of M&M’s and chocolate chips. The M&M’s add a fun crunch and a pop of color, while the mini chocolate chips add even more chocolate flavor. If you want to mix things up, you can try using peanut butter chips or white chocolate chips instead.
  • Vanilla extract: A small amount of vanilla goes a long way in enhancing the flavor of the other ingredients. It’s not a dominant flavor, but it rounds out the sweetness nicely.

How to Make No Bake Monster Cookie Bites

Making these No Bake Monster Cookie Bites couldn’t be easier. You start by lining a baking sheet with parchment paper, wax paper, or a silicone baking mat. This step ensures that the bites won’t stick to the surface when you refrigerate or freeze them later.

After that, it’s just a matter of combining all the ingredients in a large bowl and mixing them together until well combined. Once the dough is ready, it’s time to form it into balls.

A medium cookie scoop or a tablespoon is the perfect tool to portion out the dough. Each ball should be about the size of a ping pong ball, which is roughly 1.5 inches in circumference. If you don’t have a cookie scoop, you can use your hands to shape the dough into balls.

*Helpful tip – if you use your hands, first rinse them under cold water and do not dry them. This helps prevent the mixture from sticking to your hands.

After you’ve formed all the bites, place them on the prepared baking sheet and pop them into the refrigerator or freezer for about 30 minutes. This allows them to firm up so they hold their shape when you eat them.

Storing Your Monster Cookie Bites

Once your cookie bites have chilled, transfer them to a covered container. They’ll stay fresh in the refrigerator for about a week, but you can also freeze them for longer storage. If you choose to freeze them, just remember to let them thaw for 5-10 minutes before eating. This will bring them back to the perfect consistency.

*You will most often find a tube of mini M&M’s (1.77 ounces) near the checkout counter at most grocery stores. This tube contains exactly 1/4 cup of candy, which is perfect for this recipe!

INSTRUCTIONS

The first step in making these No Bake Monster Cookie Bites is to line a rimmed baking sheet with parchment paper, wax paper or a silicone baking mat.

Although you will not be placing the baking sheet in the oven, the liner will prevent the ingredients from sticking to the pan when placed in the refrigerator or freezer.

Set the prepared baking sheet aside. Then in a large bowl add all of the ingredients listed above and stir until well combined.

After the dough has been mixed, use a medium scoop or a tablespoon and then spoon the dough into your hands. Then roll it between your palms until it forms a ball shape.

The dough ball should be about about the size of a ping pong ball, which is approximately 1.5 inches in circumference.

Place the No Bake Monster Cookie Bites on the baking sheet and repeat until the bowl is empty.

Place the baking sheet in the refrigerator or freezer and chill the bites for 30 minutes or until firm.

Then place them in a covered container. You can store the monster cookie bites in the refrigerator or freezer.

If you choose to store them in the freezer, be sure to let them thaw out for 5-10 minutes before taking a bite.
