INGREDIENTS

  • Cream cheese
  • Chunky peanut butter
  • Confectioner’s sugar
  • Cool Whip
  • Snickers Bars
  • Chocolate Cookie pie crust

INSTRUCTIONS

Before you get started making your No Bake Snickers Cheesecake, there is a little advanced planning that is required.

First you must bring the bar of cream cheese to room temperature. This typically takes about 30 minutes once you take it out of the refrigerator.

Then you must also make sure that your Cool Whip is completely thawed. Ideally this would be done by placing the frozen container in the refrigerator and let it thaw overnight.

measuring peanut butter
Using a push measuring cup is the easiest way to measure anything sticky like peanut butter.

However, if you are like me, sometimes I don’t plan that far in advance. Therefore, I would suggest placing the frozen tub in cool water and let it thaw while the cream cheese comes to room temperature.

As much as you may be tempted, I don’t recommend thawing Cool Whip in the microwave for this recipe. This technique changes the consistency of the whipped topping, and can impact the overall texture of the cheesecake.

While the cream cheese and Cool Whip are thawing, it is a good time to chop the Snickers bars.

Best Way To Chop Snickers Bars

I have tried several methods of chopping the Snickers bars for this no bake cheesecake with varying success.

First, I tried to chop them in my food processor. This did not work well as the caramel stuck to the blades.

Then I attempted to use my Pampered Chef Food Chopper. Again, the candy bars stuck to the blades resulting in a mashed mess.

However when I froze the candy bars, they chopped easily with a sharp knife. Simply slice the the candy bar in pieces in one direction, and then do the same in the opposite direction.

Once the bars are chopped, reserve the equivalent of one half of a candy bar for the topping.

Make The Cheesecake Filling

Now that everything is ready, let’s make the filling your the No Bake Snickers Cheesecake.

In a large bowl combine the cream cheese, chunky peanut butter, and powdered sugar. You can do this by hand or use a hand or stand mixer.

Once the mixture is well blended, fold in the Cool Whip.

Finally, fold in the chopped Snickers candy bars, being sure that you have reserved some for the topping.

All that is left to do is to spread the filling evenly in a chocolate cookie pie crust and sprinkle the top with the reserved chopped candy bar.

Refrigerate for at least 3 hours.

Serving Suggestions

Keep the No Bake Snickers Cheesecake refrigerated until ready to serve. You can slice and serve it immediately or add other toppings of your choice.

Suggested toppings: shaved chocolate, chocolate syrup and/or caramel topping.

**Warning – this cheesecake is very rich. Although a typical pie shaped cheesecake provides 8 servings, you may want to make slices smaller if serving with other desserts.

Enjoy! Mary
