Prime Rib has always been a favorite ‘special occasion’ main dish for my husband. Every time we go out for dinner at a nice restaurant for our Anniversary or Valentine’s Day, he always orders the prime rib special.
And the look on his face when it is served at a Christmas party is always priceless. He is like a kid in a candy store.
However, since we are will not be attending any social gatherings this year I decided that I would surprise him and make Prime Rib for dinner at home.
The first decision I had to make was whether to buy a roast with the bones or without. Although bones in any type of roast give the meat additional flavor, I decided to purchase a boneless roast.
Because there is so much marbling inside this cut of meat, I knew the flavor would still be outstanding. Plus, it would be easier for me to slice it for a beautiful dinner presentation.
The Keys to Perfect Prime Rib
It is extremely important when making prime rib to let the beef come to room temperature before cooking. This usually takes 3-4 hours after being removed from the refrigerator.
It is also important to wait to salt the meat until you are ready to put it in the oven. Salting it too early will draw out the moisture, drying out the meat.
Then when it comes to the cooking time, you will need to do a little math. Take the weight of the prime rib roast, round it up to a whole number and multiply it by 7.
For instance, if you have a roast that weights 4.76 pounds, you will cook it for 35 minutes. This amount of cook time is perfect to make your roast medium-rare.
However, if you would prefer to have your meat a little more done on the edges, and medium-rare in the middle, increase the cook time to 8-9 minutes per pound.
Finally, once you turn off the oven, DO NOT open the oven door for 2 hours. As much as you will want to check on the prime rib, keeping the heat inside the oven in crucial! Just one little peek will ruin it all.
