Every year after a big holiday meal, I waste a lot of time searching for recipes to use leftover turkey and ham.

From Turkey Tetrazzini to Ham and Bean Soup, we try to find creative ways to use up the leftover meat.

However this year, our go-to leftover turkey recipe is Turkey Noodle Casserole, made in the Instant Pot.

It tastes like a turkey pot pie. But instead of a hot creamy filling that is topped with cooked dough, we have made it into a casserole.

And the best part of all, it cooks in very little time because it is prepared in your Instant Pot (or any electric pressure cooker).

How to Make Instant Pot Turkey Noodle Casserole

So how do you make Turkey Noodle Casserole in the Instant Pot?

I prefer to dice my leftover turkey breast into small, bite-size pieces. However, you could also shred your meat instead.

First you must cut or shred your cooked turkey meat. I prefer to dice my cooked turkey breast. However, you can use whatever leftover meat that you have.

Then place the turkey in the liner of your pressure cooker. Then add in a bag of frozen vegetables.

Next add in a can of cream of chicken soup. This will add a creamy texture to your turkey noodle casserole once it is cooked.

Add a bag of frozen vegetables to the mixture to make it a little healthier.

Now all that is left to do is to add in the seasonings, broth and noodles.

Stir the mixture and press the noodles down into the liquid as much as possible.

What Type Of Noodles To Use……

I prefer to use thin egg noodles in this recipe. However, you can use wide egg noodles or even spaghetti noodles if you prefer.

Just cook the pasta for half of the time listed on the back of the package. If the package lists a range of recommended cook times, use the lower number and divide by two.

Add your egg noodles and then stir so that the broth covers the majority of the noodles.

The instructions on the package of the noodles that I used recommended to boil for 10-11 minutes . Therefore, I set my Instant Pot for 5 minutes and cooked the casserole on HIGH pressure.

Once the cooking time expires, slowly release the pressure to prevent the liquid from exiting through the valve.

Finally, stir in the heavy cream and place the turkey noodle casserole on the Saute mode until the desired thickness has been reached.

Once the cook time expires, carefully release the pressure and stir in the heavy cream. Then saute for a few minutes until the sauce thickens slightly.

The casserole will thicken as it cools. Now all that is left to do is to enjoy!

Instant Pot Turkey Noodle Casserole

Turkey noodle casserole is a fantastic way to use leftover turkey to make a satisfying meal that everyone loves.

Ingredients

  • 3 cups cubed cooked turkey
  • 16 oz bag frozen mixed veggies
  • 1 10.5 ounce can of cream of chicken soup
  • 16 oz egg noodles
  • 4 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup heavy cream

Instructions

  1. Add all the ingredients except the heavy cream to the liner of the Instant Pot and stir.
  2. Pressure cook/manual on HIGH pressure for 5 minutes.
  3. Once the cooking time expires, carefully quick release pressure. Remove the lid and stir in heavy cream.
  4. Place pot on Sauté mode and cook 2-3 additional minutes until the sauce thickens.
  5. Serve immediately.

Notes

Serve with a heated dinner roll or biscuit for a true comfort meal.

You can also use diced fresh veggies instead of frozen vegetables if you prefer.
