Why It’s Called Bubble Up Pizza Casserole

The base of the casserole consists of a can of refrigerator biscuit dough. Each biscuit is cut into smaller pieces and as it bakes the dough bubbles up.

And that is how the name came about. The dough creates a light and fluffy texture as it bakes. This is what gives the casserole a unique texture that’s different from regular pizza or Pasta Pizza Casserole.

5 Simple Ingredients

One of the best things about this recipe is that it only requires five basic ingredients:

  1. Refrigerated Biscuit Dough: You can use any brand or size, but the larger biscuits, like the Grand Biscuits, work best. They’re bigger and can hold up to the sauce and toppings better.
  2. Pizza Sauce: A jar of pizza sauce adds flavor to the dish. You can use your favorite store-bought sauce or even make your own if you prefer.
  3. Italian Sausage: Adding cooked and drained sausage gives the casserole some protein and a lot of flavor. You can use regular pork sausage, turkey sausage, or even plant-based sausage if you want to make it vegetarian.
  4. Shredded Cheese: Mozzarella is the classic choice for pizza, but you can mix in some cheddar or any other cheese you like for extra flavor.
  5. Pepperoni: Pepperoni slices are that classic pizza topping that gives the dish the familiar pizza flavor. You can also substitute other toppings if you prefer, like mushrooms, olives, or peppers.

How to Make Bubble Up Pizza Casserole

1. Prepare the Biscuit Dough

Start by opening the tube of refrigerated biscuits. If you’re using Grand Biscuits, each biscuit is fairly large, so you’ll want to cut them into smaller pieces. Take each biscuit and cut it into 8 pieces. This will give you bite-sized chunks that will bubble up as they bake.

Once you’ve cut the biscuits, place them in a large bowl.

2. Add Pizza Sauce and Sausage

Next, pour your jar of pizza sauce into the bowl with the biscuit pieces. After adding the sauce, mix in your cooked Italian sausage.

It’s important to make sure the sausage is cooked and drained before you add it to the bowl. If you’re using turkey sausage, plant-based sausage, or even ground beef, the process is the same—just cook it up in a skillet and drain off any excess grease before adding it to the mixture.

Toss everything together so that the biscuit pieces are evenly coated with the sauce and the sausage is distributed throughout.

3. Assemble the Bubble Up Pizza Casserole

Now that you’ve mixed everything together, it’s time to assemble the casserole. Spray a 9 x 13 inch baking dish with non-stick cooking spray to prevent the biscuits from sticking.

Pour the biscuit and sausage mixture into the baking dish, spreading it out evenly. You want to make sure the biscuits are distributed across the whole pan so they bake evenly.

4. Add Cheese and Pepperoni

Once the base of the casserole is in the dish, it’s time to add the toppings. Sprinkle the shredded cheese evenly over the top.

After the cheese, add the pepperoni slices on top. If you’re a fan of other pizza toppings like mushrooms, onions, or peppers, you can add those as well.

5. Bake the Casserole

With everything assembled, it’s time to bake the Bubble Up Pizza Casserole. Preheat your oven to 375°F (190°C) and bake the casserole for 25-30 minutes. You’ll know it’s done when the biscuits have puffed up, the cheese is melted and bubbly, and the edges are just starting to turn golden brown.

Keep an eye on it as it bakes, and if you notice the cheese starting to brown too much, you can cover the dish loosely with foil to prevent burning.

6. Let It Cool and Serve

Once the casserole is ready, take it out of the oven and let it cool for a few minutes before serving. This gives the biscuits time to set and makes it easier to cut and serve.

Common Ingredient Substitutions and Variations

One of the great things about this recipe is how versatile it is. You can easily swap out ingredients to fit your preferences.

  • Vegetarian Option: To make a vegetarian version, simply leave out the sausage or use a plant-based sausage alternative. You can also load it up with extra veggies like mushrooms, peppers, and onions for added flavor.
  • Different Meats: If you’re not a fan of sausage, you can use cooked ground beef, turkey, or even diced chicken instead.
  • Cheese Options: While mozzarella is the classic choice, you can experiment with different cheeses like cheddar, provolone, or even a blend of Italian cheeses.
  • Toppings: Feel free to get creative with the toppings. Add your favorite pizza toppings like black olives, green peppers, onions, or banana peppers.

Storing Leftovers

If you have any leftovers, Bubble Up Pizza Casserole stores well in the refrigerator. Let it cool completely before transferring it to an airtight container. It will keep for 3-4 days in the fridge.

To reheat, you can microwave individual portions or cover the entire dish with foil and reheat it in the oven at 350°F until warmed through.
