Crock Pot Creamy Beef and Shells is an easy family dinner made with ground beef, tender pasta shells, and a creamy tomato sauce topped with melted cheese. It has all the familiar flavors of a hearty pasta dinner with very little hands-on preparation.
The crock pot does most of the work, making this a helpful recipe for busy weekdays. Brown the beef, add the sauce ingredients, and let everything cook together. About an hour before dinner, stir in the pasta, cream, and cheese.
You can even brown the ground beef ahead of time to make getting dinner started easier. Then all that is left to do in the morning is combine the ingredients and turn on the crock pot.

Serve it with a side salad and garlic bread knots for a filling meal. It is especially welcome on a chilly evening when everyone wants something warm and comforting.
Why Make Beef and Shells in the Crock Pot?
As much as I enjoy a baked pasta casserole, some days it is easier to get dinner started earlier and finish it when everyone gets home.
This recipe lets the beef, tomatoes, and seasonings cook together while you take care of other things. Since the pasta goes in near the end, you have more control over its texture.
That last part is important. Although the sauce cooks for several hours, the shells do not spend the entire day in the crock pot. Adding them too early can leave you with soft, mushy pasta.
The cream and cheese also go in toward the end. They turn the tomato sauce into a creamy coating that settles inside the shells.

Ground Beef, Onion, and Garlic
Ground beef gives this dinner its hearty flavor. Brown it in a skillet before adding it to the crock pot, breaking it into small pieces as it cooks.
Drain off excess grease so the finished sauce does not become oily. If you are using very lean beef, a little oil can help keep it from sticking to the skillet.
Diced onion and minced garlic add flavor without much extra work. You can add them directly to the crock pot or soften the onion with the beef first. If cooking the garlic in the skillet, add it during the final minute.

Pasta Sauce, Tomatoes, and Broth
A jar of pasta sauce keeps preparation simple. Use a tomato-based sauce your family already enjoys, such as marinara or traditional spaghetti sauce.
The diced tomatoes add texture, while the beef broth provides liquid for the pasta to absorb later. The mixture will look thin before the shells go in, but that extra liquid serves a purpose.
Italian seasoning, salt, and black pepper round out the sauce. If your broth or pasta sauce is salty, start with less salt and adjust before serving.
Pasta Shells, Cream, and Cheese
Small or medium pasta shells work well because they catch bits of beef and sauce inside. Measure the shells dry, and add them uncooked near the end of cooking.
Mozzarella provides the melted cheese topping, while Parmesan adds flavor to the sauce. Heavy cream makes the sauce richer and creamier, although you can leave it out if you prefer.
Freshly shredded cheese generally melts more smoothly, but packaged shredded cheese is convenient and works for an everyday dinner.
How to Make Crock Pot Creamy Beef and Shells
1. Brown the Ground Beef
Place a skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until fully cooked. Drain and transfer it to a 6-quart crock pot.
Add the diced onion and minced garlic. If you softened them in the skillet with the beef, simply transfer everything together.
Browning the meat first improves the texture and allows you to remove the grease before it gets mixed into the sauce.

2. Cook the Sauce
Add the pasta sauce, diced tomatoes, Italian seasoning, black pepper, salt, and beef broth. Stir until everything is combined.
Cover and cook on LOW for 6 hours or HIGH for 3 to 4 hours. Keep the lid in place as much as possible so the crock pot maintains its heat.
At this stage, you are cooking the sauce and softening the onion. The pasta, cream, and cheese will be added later.
3. Add the Pasta and Cream
Stir the hot sauce, then add the uncooked pasta shells, heavy cream, ½ cup mozzarella, and Parmesan cheese.
Mix well, making sure the shells are pushed beneath the liquid. Pasta sitting above the sauce may cook unevenly and remain firm along the exposed edges.
Sprinkle the remaining mozzarella over the top. Cover and cook on LOW for approximately 1 hour, checking the pasta after 30 to 45 minutes. Cooking time varies with the size of the shells and your crock pot.
4. Check Before Serving
Dinner is ready when the pasta is tender and the cheese has melted. A crock pot will melt the topping, although it usually will not brown it like an oven would.
If the pasta needs more time and the sauce looks too thick, gently stir in a splash of hot broth. Replace the lid and continue cooking, checking frequently.
Once the shells are tender, serve promptly to keep them from absorbing too much sauce.

Using a Programmable Crock Pot
A programmable crock pot is helpful when your schedule does not line up exactly with the sauce cooking time. Many models switch to a warm setting when the programmed cooking time ends.
However, the warm setting is for holding cooked food, rather than cooking the pasta. If the sauce has been on warm, switch back to a cooking setting and allow it to become thoroughly hot before adding the shells.
Plan for approximately an hour to finish dinner after adding the pasta. This recipe needs that final step, so it is helpful to work it into your evening routine.
Easy Ingredient Substitutions
Ground Italian sausage adds a different flavor, and you can use it for all or part of the beef. Ground turkey or chicken also works when you want another option.
For a meatless version, use plant-based crumbles and vegetable broth, following the package directions for preparing the crumbles.
Elbow macaroni or other small pasta shapes can replace the shells. Cooking times may differ, so begin checking early. Larger shapes and gluten-free pasta may behave differently and need closer attention.
Half-and-half can replace the heavy cream for a lighter sauce. Milk will make it less rich and may separate more easily, so stir it in near the end instead.
Make-Ahead, Storage, and Reheating Tips
To save time, brown the beef up to 3 days ahead. Refrigerate it promptly in a covered container. You can also dice the onion and measure the seasonings in advance.
Keep the pasta separate until the finishing stage. It will absorb liquid and soften if mixed into the sauce too early.
Refrigerate leftovers promptly in shallow, covered containers and use within 3 to 4 days. The shells will continue absorbing sauce as they sit.
Reheat individual portions in the microwave, stirring partway through, or warm a larger amount gently in a saucepan. Add a splash of broth or water to loosen the sauce.
A simple salad, steamed broccoli, or green beans makes an easy side dish. With beef, pasta, and plenty of sauce already in the crock pot, you only need a little something alongside it to finish dinner.
