Strawberry Bread -A Great Dessert, Breakfast or Snack Recipe

When you think about recipes that you can make using fresh picked or store bought strawberries, Strawberry Bread probably isn’t the first thing that comes to your mind. In fact, many people have never even heard or tasted this sweet bread.

Although, adding fruit to bread is not an unheard concept. In fact, you would be hard pressed to find someone that hasn’t tried or made banana bread.

But instead of adding ripe bananas to a sweet bread dough, this time tiny bits of strawberries are what makes this bread so good. And to make it even better, the bread has a sweet strawberry glaze that coats the top surface.

With just one bite, you will be convinced that you will be making this recipe over and over again. Not only is it delicious, but it is so easy to make that even a novice baker can master this recipe!

It takes less than 15 minutes to prepare and bakes in under an hour. However, the hardest part is letting the bread cool after it comes out of the oven.

Although you will be tempted to take a piece of the warm bread, you must allow the bread time to cool so that the glaze can be drizzled on top. Believe me, it will be well worth the wait when you sink your teeth into a piece of this delicious bread.

Strawberry Bread Recipe

INGREDIENTS:

  • 1/4 cup butter, softened to room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1 1/2 cups chopped strawberries

GLAZE INGREDIENTS

  • 1 cup confectioners sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla
  • 1/4 cup diced strawberries

INSTRUCTIONS:

The first step in making this recipe is to bring the butter to room temperature. Although this requires a little advance planning, it is a necessary step.

If you try to mix cold butter with sugar, you will be left with tiny clumps of butter with sugar crystals attached to the surface. And when this mixture gets put in the oven, it will cause the bread to cook unevenly.

It is important to allow the butter to come to room temperature so that it creams well with the sugar.

However, when you use room temperature butter the mixture will become light and fluffy. Therefore, it is important to allow the butter to soften before making not only this Strawberry Bread recipe, but any bread recipe!

It will take the butter approximately 30-45 minutes to naturally come to room temperature. While you are waiting, grease and flour a 9 inch loaf pan then set it aside.

Now prepare your strawberries by cutting them into small bits. Although you can use a sharp knife, I prefer to use a Strawberry Slicer.

However instead of leaving them in thin slices, cut them a second time in the opposite direction. This will leave you with small enough sections that can be added to the dough without any other work.

Set the cut strawberries aside and prepare the dry ingredients. In a medium bowl, add the flour, baking powder and salt and whisk until no large clumps of flour are visible. Set aside.

Prepare The Strawberry Bread Dough

When the butter is softened to room temperature, preheat the oven. Then place the butter in a medium size mixing bowl.

Add the granulated sugar to the butter and mix on medium speed. Continue to mix until the butter and sugar blend together and become light and fluffy.

Once the bread dough has been made, fold the strawberries in the dough and spread it out evenly in the bread pan.

Then add the egg and mix until incorporated and the egg is no longer visible. Slowly add 1/3rd of the dry ingredients to mixing bowl and mix until the flour is absorbed.

Then add 1/3rd of the milk and mix until combined. Repeat two more times until the flour and milk have fully been added.

Next, pour the vanilla extract into the bowl. Mix just until combined. Then gently fold in the chopped strawberries until they are evenly incorporated throughout the batter.

Using a silicone spatula pour the batter into the prepared loaf pan. Then smooth out the batter so that you have an even layer across the top.

Baking Instructions

Bake for approximately 50-55 minutes or until a toothpick placed in the center of the loaf comes out clean. Remove the Strawberry Bread from the oven and place the loaf pan on a cooling rack.

Let the bread cool for 10 minutes. Then carefully remove the bread from the pan and let it cool completely.

Although it is hard to resist the smell of this delicious bread, you must let it cool completely before pouring the glaze on top.

If you are anxiously awaiting taking a bite of this bread, you can speed up the cooling process by placing the bread in the refrigerator or freezer.

After the bread is completely cool prepare the icing by mixing together the confectioners sugar, vanilla and 1 tablespoon of milk. Whisk until smooth.

Then add the diced strawberries. *For the glaze, I cut the strawberry pieces in smaller sections than the strawberries that were added to the bread dough.

Add more milk to thin the icing if needed. However the juices from the strawberries will also thin out the glaze. If the glaze is too thin, add more confectioners sugar.

Storing Recommendations

It is best to store Strawberry Bread in the refrigerator. This will allow the glaze to remain firm.

The bread will remain good in the refrigerator for a week. However, I doubt that it lasts that long!

Not only are there strawberries scattered throughout the bread, there are more strawberries that are included as part of the glaze that is poured on top of the loaf.

Serving Suggestions

You can serve a slice of this bread for a sweet breakfast treat, for dessert, or a late night snack. However, you can also add a thin layer of whipped cream cheese and/or strawberry jam on the surface and take it to the next level!

Ingredients

Instructions

Preheat oven to 350°F  (180°C).  Grease and flour a 9 inch loaf pan, set aside.
In a medium bowl add the butter and sugar and cream until light and fluffy.
Add the egg and mix until incorporated.
In a medium bowl whisk together the flour, baking powder and salt.
Slowly add 1/3rd of the flour mixture to bowl and mix until flour is absorbed. Then add 1/3rd of the milk and mix until combined. Repeat until flour and milk have fully been added.
Add the vanilla and mix just until combined.
Gently fold in the strawberries and spoon batter into the prepared loaf pan.
In a small bowl mix together the sugar and cinnamon and sprinkle on top of the loaf.
Bake for approximately 45 - 50 minutes or until a toothpick placed in the center of the loaf comes out clean. Let cool completely.
After the bread is completely cool prepare the icing by mixing together the confectioner's sugar, vanilla and 1 1/2 tablespoons of milk. Whisk until smooth. Add more milk to thin the icing if needed.
Drizzle glaze on top.
