Chicken breasts that are coated in an easy, homemade fajita seasoning and then topped with sliced peppers and onions. Then shredded Mozzarella cheese is sprinkled on top before it gets put in the oven.
Once it comes out of the oven you can eat it as a complete protein and vegetable meal. Or serve it with cauliflower rice or low-carb tortilla shells.
And if you are making this for a quick and easy dinner recipe and not counting your carbohydrate intake, then serve it with steamed white or brown rice or serve it with a side dish of potatoes.
It is a delicious dinner recipe that is perfect to serve on a busy weeknight. It takes only 10 minutes to prepare and from start to finish dinner is ready to eat in only 30 minutes!
Recipe Tips
1. Boneless, Skinless Chicken Breasts
This recipe is best made with boneless, skinless chicken breasts. The cook time required for the chicken breast will allow the peppers and onions to become tender, yet stay slightly crisp.
However you can substitute boneless, skinless chicken thighs in place of the chicken breasts if you prefer. Although, the cook time will decrease to 12-15 minutes.
Therefore, in this case it would be best to saute the peppers and onions before adding them the chicken fajita casserole so that they become tender.
This would also be the case if you wanted to dice the chicken before placing the pieces in the casserole dish. Diced chicken breasts cook faster than full size chicken breasts.

2. Peppers and Onions
Because this recipe is ready to eat with just 20 minutes of bake time, it is best to thinly slice the peppers and onions. You can use a sharp knife to cut the vegetables into even size strips.
Although, if you have a mandoline slicer, this would be a great time to pull it out of the cupboard. The blades will cut the vegetables thin and evenly.
Just be sure to use the hand guard to protect your fingers. The blades are very sharp and can slice your fingertips before you know it.
3. Chicken Fajita Casserole Seasoning
If you have a packet of store bought Fajita seasoning you can use that to flavor the chicken. However, it is very easy to make your own seasoning with a few basic spices that you most likely already have in your spice cabinet.
Simply mix together the paprika, chili powder, garlic powder and cumin. Then add a little salt and pepper and and you have easy homemade seasoning.
4. Shredded Cheese
When it comes to the variety of cheese that you use, it is totally up to you. Mozzarella is a safe and delicious choice.
However, if you like a little spice in your food, you can use Pepper Jack cheese instead. Although if you are serving this recipe to family and friends you might want to stick to a milder blend of cheese such as Mexican or Italian blend.
And speaking of what type of cheese to use, most of us will use store bought shredded cheese and that is fine. However, if you are looking for your cheese to be completely melted and smooth, it is best to grate your own block of cheese.
This is because the packages of shredded cheese that you find at the grocery have been coated with an anti caking agent that prevents the cheese from clumping. However this same agent prevents the cheese from melting completely.
Although it will melt you may still see individual stands outlining the top of the casserole.
Chicken Fajita Casserole Recipe

INGREDIENTS
- 1 lb chicken breast, skinless, boneless
- 1 green bell pepper
- 1 red bell pepper
- 1 medium sweet onion
- 2 teaspoons paprika
- 1 1/2 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin powder
- Salt and fresh black pepper to taste
- 1 tablespoon olive oil
- 1 cup shredded Mozzarella cheese
INSTRUCTIONS
Preheat your oven to 400°F (200°C). Then spray a 9 x 13 inch baking dish with non stick cooking spray. Set aside.
If you have thick chicken breast pieces, slice them in half horizontal to the cutting board to make thinner chicken breasts. Then place the chicken on a shallow plate or platter. Set aside.
Using a clean cutting board and knife to slice the green pepper, red bell pepper and onions into thin strips. Set aside.
In a small bowl make the chicken fajita casserole seasoning by adding the paprika, chili powder, garlic powder, cumin, salt, and pepper and mix until well incorporated. Remove 1 teaspoon of the seasoning for later use.
Drizzle the olive oil over both sides of the chicken breasts. Then sprinkle the seasoning on both sides of the chicken breasts (not the reserved seasoning).
Place the seasoned chicken breasts into the prepared baking dish. Top chicken breasts with the sliced peppers and onion.
Sprinkle the remaining seasoning on top over the vegetables. Then add the shredded mozzarella cheese on top of the vegetables.
Place the baking dish in the oven and bake for 20 – 30 minutes. The cook time will depend on the thickness of the chicken breasts.
The chicken is cooked through when it reaches an internal temperature of 160°F (71°C) when checked with an instant read thermometer.
Optional Step:
At the end of the cook time place the casserole under the broiler to lightly brown the cheese. However keep a close eye on it so that it doesn’t get too brown.
Serve warm with rice, cauliflower rice, or serve the chicken fajita casserole with tortilla shells or as is for a low carb, Keto friendly meal.
