Barbecue Cheeseburger Casserole is one of my favorite weeknight meals. Not only is it easy to make, but even the pickiest eaters love this dish!
It takes all of the familiar ingredients of a barbecue cheeseburger and transitions it into a family friendly meal. Ground beef flavored with your favorite barbecue sauce and topped with a biscuit like topping.
Then when it is time to serve, customize each piece of the casserole by adding some of your favorite cheeseburger toppings. These most often include shredded lettuce, pickles and tomatoes, but add whatever you like!
The best part about making casseroles for dinner is that they are so versatile. You can adapt the ingredients to meet the taste preferences for you and your family.
For instance, this recipe calls for the addition of diced green peppers. Although not a common ingredient found in cheeseburgers, the tiny bits of green peppers add a nice crunch to the casserole.
However, if you have family members who don’t prefer the taste of green bell peppers, or you simply don’t have one in the house and don’t want to head to the grocery store, omit it. Or add in another ingredient in its place.
Don’t Be Afraid To Make Simple Additions…
As you can see, you can adapt this recipe very easily. One of my favorite additions to add to this barbecue cheeseburger casserole is cooked and crumbled bacon.
In fact, I will not only add it to the filling mixture, but I will also add it as a garnish on top of the casserole when it is served. In my opinion, there is nothing that goes better on a cheeseburger than bacon!

However you choose to make your casserole, I am sure you are going to love how easy this recipe is to make for dinner. Although, don’t just limit this recipe to dinner.
This casserole is great to serve at a pot-luck or large communal gathering. It also makes a great, edible gift for a family who is bringing home a new baby or could appreciate a donated meal in a time of need.
Best of all, it requires common ingredients that you may already have in your kitchen. Simply follow the instructions below to make this quick, easy and delicious dinner for you and your family.
Barbecue Cheeseburger Casserole Recipe

- 1 lb ground beef
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped medium onion
- 1/3 cup barbecue sauce
- 1 1/2 cups shredded cheddar cheese, divided
- 1 cup baking mix (Bisquick or generic brand baking mix)
- 1 cup milk
- 2 large eggs
More About Some Of The Ingredients
1. Ground Beef
It is best to use lean ground beef for this recipe. I would recommend a 90/10 lean to fat ratio. However, if you want to make this recipe healthier you can substitute the ground beef with ground turkey, chicken or even plant based crumbles if you prefer.
However, if you do substitute the meat, you will need to add a little extra virgin olive oil to the skillet to prevent the meat from sticking to the surface of the pan when browning.
2. Barbecue Sauce
Use whatever barbecue sauce that you love in this barbecue cheeseburger casserole. I enjoy the taste of Sweet Baby Ray’s and Stubb’s Original Barbecue Sauce.
Although, if you need to watch your sugar intake, be sure to use a sugar-free sauce instead. Thankfully, with the Keto diet craze, these are pretty easy to find in most grocery stores.
However, my favorite Keto friendly barbecue sauce is Yo Mama’s. I purchase it through Amazon because I can’t find it at my local food market.
3. Shredded Cheese
As for the cheese, I find that freshly grated sharp cheddar cheese adds the most flavor and melts the best during the baking process.
However, feel free to switch up the cheese based on your taste preferences. For instance, you can use a milder cheese such as Provolone or Swiss cheese.
And if you like to spice things up, you can definitely substitute the Cheddar cheese with shredded Pepper Jack cheese instead.
4. The Topping
The topping for this barbecue cheeseburger casserole uses a standard baking mix. You can use any ‘Bisquick’ variety, including a gluten free mix.
You can even make and use a Homemade Baking Mix recipe instead of the boxed mix as well. This is a great option for those who want to make this recipe and live overseas where standard baking mix is not readily available.
Now that you about the various ingredients that can be used, let’s get cooking!
COOKING INSTRUCTIONS
The first step in making this Barbecue Cheeseburger Casserole is to pre-heat the oven. Then spray the bottom and sides of an 8 or 9-inch square baking dish with non-stick cooking spray, and set aside.
Then prepare the beef filling by heating a large skillet over medium heat. Once the pan is hot add the ground beef, diced bell pepper and diced onion to the pan.
As the ground beef begins to cook, use a wooden spatula to break it up in small crumbles. Continue to cook until the beef is no longer pink.
Then pour the beef mixture into a colander to drain off the grease. Once the grease has drained off, place the beef mixture in the prepared baking dish.
Pour the barbecue sauce on top of the meat and stir until evenly coated. Then cover the top of the beef with 3/4 cup of the shredded Cheddar cheese. Set the casserole dish aside while you prepare the Barbecue Cheeseburger Casserole topping.
Topping Instructions
To make the topping, add the baking mix, milk and eggs to a medium size bowl. Stir the ingredients together until well blended.
Once everything is mixed together pour the topping in an even layer over the beef mixture. Use a silicone spatula to even out the batter if necessary.
Place the casserole dish in the preheated oven and bake for 25 minutes. Once the initial baking period is up, remove the pan from the oven and then sprinkle the top with the remaining 3/4 cup of shredded cheese.
Place the casserole dish back in the oven and bake 5 minutes longer, or until a knife inserted in center comes out clean.
Remove the pan from the oven and let it sit for 5 minutes before serving. Top your Barbecue Cheeseburger Casserole with your favorite toppings.

Barbecue Cheeseburger Casserole
A quick and easy meal that is sure to please the entire family. Topped with a cheesy layer of crust made from store-bought baking mix.
Ingredients
- 1 lb ground beef
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped medium onion
- 1/3 cup barbecue sauce
- 1 1/2 cups shredded cheddar cheese, divided
- 1 cup baking mix
- 1 cup milk
- 2 large eggs
Instructions
- Pre-heat oven to 400°F (220°C) and spray the bottom and sides of an 8 or 9-inch square baking dish with non-stick cooking spray, set aside.
- In a large skillet over medium heat, add beef, bell pepper and onion, and cook until beef is brown. Drain off grease.
- Place ground beef mixture in the prepared baking dish and stir in the barbecue sauce.
- Cover the top with 3/4 cup of the cheese.
- In medium bowl, stir baking mix, milk and eggs together until blended. Pour evenly over beef mixture.
- Bake for 25 minutes.
- Sprinkle with the remaining 3/4 cup cheese and bake 5 minutes longer or until a toothpick inserted in center of the topping comes out clean.
Notes
Top with your favorite cheeseburger toppings: shredded lettuce, diced tomatoes, pickles and/or cooked and crumbled bacon. Serve with additional barbecue sauce if desired.
