When you need an easy dinner that will fill everyone up, this French Onion Beef and Noodle Casserole is a great choice. Ground beef and tender egg noodles are tossed in a creamy onion sauce, topped with Swiss cheese, and baked until hot and bubbly. A handful of crispy fried onions added near the end gives the casserole a little crunch in every serving.
It is the kind of meal that fits right into the dinner rotation once November arrives. The ingredients are easy to find, the preparation is simple, and one baking dish makes enough to feed the family with a little left over for lunch.
Although the name might make you think of slowly caramelized onions and a long cooking process, this version takes a few shortcuts. A fresh onion and a packet of dry onion soup mix provide plenty of flavor without spending an hour at the stove.

The sauce comes together with condensed cream of mushroom soup, beef broth, and sour cream. Stir everything together with the cooked beef and noodles, add the cheese, and let the oven finish dinner.
What Makes This French Onion Beef and Noodle Casserole Different?
French onion soup is known for its rich onion flavor and melted cheese topping. This casserole takes those familiar flavors and turns them into a filling dinner with ground beef and egg noodles.
The fresh onion softens in the skillet before being mixed into the sauce. Dry onion soup mix adds another layer of onion flavor along with the savory seasonings that bring everything together.
Swiss cheese provides a slightly nutty flavor that helps hold the casserole together. Then the crispy fried onions give the top a crunchy finish.

Ingredients
Ground beef: Lean ground beef works well because there is less grease to drain. A 90/10 blend is a good choice, although you can use whatever ground beef you have on hand. Drain any excess grease before adding the other ingredients.
Egg noodles: Wide egg noodles hold the creamy sauce well and give this casserole its familiar beef and noodles texture. Measure the noodles by their dry weight because different shapes can take up different amounts of space in a measuring cup.
Onion: A medium yellow onion adds flavor without becoming too sweet. Dice it into small pieces so it softens evenly and blends into the casserole.
Dry onion soup mix: Use one standard packet, approximately 1 ounce. This is the dry seasoning mix, not canned French onion soup or prepared onion dip.
Condensed soup: Cream of mushroom soup makes an easy sauce that complements the beef. Use it straight from the can without adding the water listed in the soup preparation directions. Cream of chicken soup can be substituted if that is what you prefer.
Sour cream: Full-fat sour cream gives the sauce a creamy texture. Stir it into the skillet after removing the pan from the heat.
Cheese: Swiss cheese is my first choice for this recipe. However, provolone makes a good substitute if your family prefers a milder flavor.

How To Make French Onion Beef and Noodle Casserole
Specific measurements and complete instructions are included in the printable recipe card below. Here are a few helpful tips for preparing the casserole.
Cook The Noodles
Start by preheating the oven to 375°F and spraying a 9 x 13 inch baking dish with nonstick cooking spray.
Bring a large pot of water to a boil and add the egg noodles. Cook them about 2 minutes less than the package directions recommend.
The noodles should still have a little firmness because they will continue cooking in the oven. If they are completely soft before going into the baking dish, they can become mushy during baking.
Drain the noodles and set them aside. There is no need to rinse them.
Prepare The Beef And Onions
While the water heats and the noodles cook, brown the ground beef in a large skillet over medium-high heat. Break it into small crumbles as it cooks so the meat distributes evenly throughout the casserole.
Once the beef is cooked, drain any excess grease and transfer the meat to a plate.
Reduce the heat to medium and add the butter and diced onion to the same skillet. Cook for 8 to 10 minutes, stirring occasionally, until the onion becomes tender and lightly golden.
The goal is to soften the onion and develop some color. You do not need to cook it until it becomes deeply caramelized. Add the garlic during the final 30 seconds so it does not burn.

Mix The Sauce
Pour the beef broth into the skillet and scrape the bottom to loosen any browned bits. Stir in the dry onion soup mix, Worcestershire sauce, condensed cream of mushroom soup, and black pepper.
Bring the mixture to a gentle simmer and stir until the sauce is evenly combined. Remove the skillet from the heat before stirring in the sour cream.
Return the cooked beef to the skillet. Then combine the beef mixture with the drained noodles in a large mixing bowl or the skillet if it is large enough.
Assemble And Bake
Spread the French onion beef and noodle casserole mixture evenly in the prepared baking dish. Sprinkle the shredded Swiss cheese over the top.
Cover the dish with foil and bake for 20 minutes. Remove the foil, sprinkle the crispy fried onions over the cheese, and return the casserole to the oven.
Bake uncovered for another 5 to 10 minutes, until the casserole is hot throughout and the onions are golden. Adding the onions near the end helps keep them crisp without burning.
Let the casserole rest for 5 minutes before serving so the sauce has a chance to settle around the noodles.

Easy Changes And Additions
For extra vegetables, sauté 8 ounces of sliced mushrooms along with the onion. Use a large skillet and allow the liquid released by the mushrooms to cook away before adding the sauce ingredients.
Frozen peas are another easy addition. Stir about 1 cup into the beef and noodle mixture before transferring it to the baking dish.
You can also substitute ground turkey for the beef. If the turkey is very lean, add a little oil to the skillet to keep it from sticking.
Because the soup mix, condensed soup, cheese, and fried onions all contain salt, use reduced-sodium soup and unsalted beef broth when available. Taste the sauce before deciding whether it needs any additional salt.
Make Ahead And Leftover Tips
To prepare dinner ahead of time, assemble the French onion beef and noodle casserole through the cheese topping. Cool and cover, then refrigerate for up to 24 hours. Keep the crispy fried onions separate until the final portion of baking.
Bake directly from the refrigerator in a dish suitable for that temperature change, allowing approximately 10 to 15 additional minutes under the foil. The center should be hot before you add the onions
Refrigerate leftovers promptly in a covered container. Add a splash of broth or milk when reheating to loosen the sauce, and keep a few extra fried onions on hand to sprinkle over each serving.
Enjoy! Mary

- 1 medium yellow onion, diced

- Remove the foil and sprinkle the crispy fried onions over the cheese. Bake uncovered for another 5 to 10 minutes, until the casserole is hot throughout and the topping is golden.
- Let rest for 5 minutes before serving.
Notes
- Use the condensed soup straight from the can. Do not prepare it according to the soup label directions.
- Provolone cheese can be substituted for Swiss cheese.
- Taste the sauce before adding salt because several ingredients already contain salt.
- For a make ahead meal, assemble through the cheese topping and refrigerate for up to 24 hours. Bake covered for approximately 30 to 35 minutes, or until hot in the center, before adding the fried onions and baking uncovered.
- Add a splash of broth or milk when reheating individual portions to help loosen the sauce.
