Slow Cooker Reuben Dip Recipe

Of course, you could make a traditional Reuben sandwich with the leftover meat. However, this hot and bubbly dip gives you all the flavors of a Reuben in an easy to eat, and easy to share form.

Plus, it is great to serve at any party or potluck! In fact, every year, the day after St. Patrick’s Day, it is custom for me to make this and share it with my family and friends.

Although, Corned beef and cabbage didn’t originate in Ireland, it still is a popular dish served here in the United States on March 17th. And many people have leftovers that they don’t know what to do with.

Using about 8 ounces of corned beef, cut it into tiny pieces before adding it to your slow cooker.

And even if you don’t have any leftovers, or don’t even make Corned Beef for St. Patrick’s Day, there is always the deli at your local grocery store. Simply order 1/2 pound of sliced corned beef and you are all set!

How to Make Slow Cooker Hot Reuben Dip

And you aren’t going to believe how easy it is to make this Hot Reuben Dip in the Slow Cooker.

Be sure to drain most of the liquid from your Sauerkraut to prevent the dip from being too runny.

Although it is very simple, as in a true ‘dump and go’ recipe, there are a few hints to make it perfect.

First, start with cream cheese that is softened to room temperature. Although it isn’t absolutely critical, cream cheese that is softened will cook much faster.

Next, be sure to cut your corned beef into small pieces. Because this is a dip, you don’t want large chunks of beef scattered randomly throughout.

This recipe couldn’t be easier – simply add all the ingredients to the slow cooker.

And finally, when it comes to the sauerkraut, drain it in a colander before adding it to your slow cooker. If you simply add the sauerkraut from the jar or bag, the dip will become too thin.

Simply drain it in a colander and push the sauerkraut down with your hand or a measuring cup to release the hidden liquid.

Stir the ingredients together half way through the cooking process. The dip is ready when it is hot and bubbly.

Then add all of the Reuben dip ingredients to your small, 3 quart slow cooker. Cook on high for 2-3 hours, stirring half way through. Once everything is melted, serve with crackers, chips and/or vegetables.

Slow Cooker Hot Reuben Dip Recipe

All the flavors of a Reuben sandwich made into a dip and perfect to serve at any party or potluck.

Ingredients

  • 1 8 ounce package cream cheese, softened
  • 8 ounces corned beef, coarsely chopped
  • 1/2 cup sauerkraut, well-drained
  • 1 cup shredded Swiss cheese
  • 1/4 cup sour cream
  • 1/4 cup Thousand Island salad dressing
  • crackers or chips, for serving

Instructions

  1. In a small slow cooker, combine softened cream cheese, corned beef, Swiss cheese, sauerkraut, sour cream, and Thousand Island dressing.
  2. Heat on HIGH for 2-3 hours or LOW for 4-6 hours. Serve with crackers or chips.
