With the weather so hot this past weekend, it was time to make my absolute favorite frozen cocktail – Yellow Finch!
I first had this cool and refreshing drink while I was on vacation in the Bahamas. It was the perfect beverage to sip while relaxing by the pool.
There was a strong pineapple flavor that gave the Yellow Finch that classic tropical taste. I could also taste a hint of orange and banana flavoring. This frozen combination made up the perfect cocktail.
Of course, it truly isn’t a cocktail without a little bit of alcohol. And if you have ever been to the Bahamas you know that the alcohol of choice for almost every adult beverage is rum.
So when I asked the bartender if I could have the recipe, she kindly shared the ingredients with me.
It consisted of frozen pineapple chunks that made up the foundation of the drink. A little orange juice was added for flavor and to thin out the pureed frozen pineapple.
But there were two things that shocked me the most about the Yellow Finch ingredient list. Instead of using actual bananas it called for banana liqueur.
When I asked why regular bananas weren’t included the bartender stated that the drink would turn out too much like a smoothie. Instead of smooth and creamy drink, they wanted it to be a lighter, frozen, icy texture.
So on to the final ingredient, spiced rum. I again had no idea that there were so many different types and styles of rum. There is smooth and clear rum which tends to be the most popular for most cocktail drinks.
However, this Yellow Finch recipe included spiced rum. Spiced rum is rum that is aged in oak barrels and then infused with flavors from various tropical leaves.
The flavors can include vanilla, coconut, cinnamon and various other spices that compliment any tropical drink.
After a trip to the liquor store and a lot of help from the staff, I was on my way to recreate the Yellow Finch!
However, my first attempt did not turn out like I expected. The flavor of the spiced rum was MUCH stronger than what I recalled.
I am not sure if it was the brand that I bought, but I knew I had to adjust the recipe to recreate the perfect Yellow Finch that I could share with my adult friends.
So I decided to decrease the amount of spiced rum and added clear rum to balance the drink out. It was PERFECT!!
Now, although that I can’t hang out on the beaches in the Bahamas, I can reminiscence while drinking a frozen Yellow Finch!

Yellow Finch Frozen Cocktail - Pineapple, OJ, Banana and Rum Cocktail
A tropical frozen cocktail that is light and refreshing, perfect for any warm day!
Ingredients
- 3 cups frozen, pineapple chunks
- 1/2 cup orange juice
- 1/4 cup banana liqueur
- 1/3 cup spiced rum
- 1/3 cup clear rum
Instructions
- Pour everything in a high speed blender and mix until pineapple chunks have pureed.
- Add additional orange juice if mixture is too thick or add ice if too thin.
