Instant Pot Chicken Leg Quarters

Chicken Leg Quarters are not only delicious, but they are also economical and easy to make when cooked in your Instant Pot.

Every time that we go to the grocery store, we are always shocked at how inexpensive chicken leg quarters are. You can get a lot of meat for very little cost per pound.

However, the only real way to get them to cook properly is by roasting them in the oven. And that unfortunately, takes a long time.

So instead, we began to grill our chicken leg quarters. Although the chicken has great flavor when cooked on the grill, it is very difficult to get the end result perfectly cooked.

Either the meat is undercooked in the center or the thinner portions are so dried out that they are difficult to chew.

So instead, we now use our Instant Pot to make Chicken Leg Quarters.

How to Make Instant Pot Chicken Leg Quarters

We have used this method over and over again and it turns out perfect every time!

Add your dry rub seasoning to the chicken leg quarters before cooking.

You must first decided if you want to season your leg quarters or not. If you are using a dry rub, season before putting them in the Instant Pot.

If you are more of a barbecue sauce person, you can add the sauce either at the beginning or at the end of the cooking process.

Before cooking, remove the chicken from the refrigerator at least 20 minutes before placing them in the multicooker.

Stack your chicken leg quarters on the trivet so that the legs are facing upward.

Although this isn’t absolutely necessary if you are short on time. However, it helps the pot come to pressure quicker than if you start with cold chicken.

When you are ready to cook your chicken leg quarters, place 1 cup of water in the liner of the Instant Pot.

Then place the trivet down in the water. Next, place the chicken leg quarters stacked sideways, with the leg facing the top of the pot.

Once the cook time expires, allow for 8 minutes of natural pressure release before removing the lid.

Lock the lid in place and pressure cook on HIGH pressure for 20 minutes.

Remember, from a timing standpoint to allow time for the pot to come to pressure.

Then when the cook time is up, allow for the pot to Naturally Release Pressure for 8 minutes.

Serve or Brown

Now you can decided whether or not that you want to brown the skin or not. This step is based solely on preference.

However, we found that even though we don’t eat the skin, we like the flavor that a grill gives to the chicken.

We prefer to place the cooked chicken leg quarters on the grill to crisp up the skin and to give the chicken that grilled flavor.

We remove the chicken leg quarters from the Instant Pot and place them on the grill for 5 minutes per side.

You could also place them under the broiler, or use the crisping lid of the Instant Pot or Ninja Foodi as well.

Or of course, you can serve them directly out of the Instant Pot as well.

What you will be left with is fall apart tender chicken!

Instant Pot Chicken Leg Quarters

How to make the most delicious leg quarters in the Instant Pot and finishing them off under the crisper lid, on the grill or under the broiler.

Ingredients

  • 4 Chicken Leg Quarters
  • 1 cup water
  • Seasoning or sauce of your choice

Instructions

  1. Place 1 cup of water in the liner of the Instant Pot
  2. Add the trivet inside the pot.
  3. Stack the chicken leg quarters in a bookshelf manner, placing the thickest part of the leg quarter resting on the trivet, with the leg facing upward towards the lid.
  4. Lock the lid in place and move the valve to the SEALING position.
  5. Pressure Cook/Manual on HIGH pressure for 20 minutes.
  6. Once the cook time expires, allow for 8 minutes of Natural Pressure Release.
  7. Release any remaining pressure and crisp using the crisper lid, on the grill or under the broiler.
  8. Season as desired.

Notes

*It is best to let the chicken rest at room temperature 20 minutes prior to cooking to allow the Instant Pot to come to pressure quicker.
