Easy Blondie Brownies – A Great Dessert Recipe For Any Occasion

When you are looking for a delicious dessert to serve to your family and friends, make these Easy Blondie Brownies. Soft and chewy cookie bars that resemble a brownie but are made without the chocolate.

It is a delicious dessert recipe that is made with basic baking ingredients that you most likely already have in your kitchen. Once baked they are slightly crisp on the outside and soft and chewy on the inside.

Best of all you can add baking chips, candy pieces or nuts inside and on top of the batter to customize them however you like.

My favorite way to make blondie brownies is to add white chocolate chips to the batter.

However, in an effort to keep the blonde color theme going, I am made them with white chocolate chips this time. Although feel free to mix in chocolate chips, butterscotch baking chips, crushed candy bar pieces, M&Ms or nuts if you prefer.

The choice is really up to you. And by switching it up every time you make them you will never get tired of the same dessert over and over again.

The Difference Between Blondie Brownies And A Brownie

So what exactly is the difference between a blondie and a brownie? The simple answer is that a blondie doesn’t include chocolate as one of the primary ingredients.

However, there is more to it than that. Based on the history, the first brownie recipe published in the late 1800’s didn’t included chocolate at all. Instead it was a dense, fudgy like bar that had a butterscotch and caramel taste to it.

Therefore, the original recipe was actually what we know today as a blondie. However, over the years cocoa powder was added to the recipe and that is when they became known as chocolate brownies.

Texture

Another difference between the two is the texture of the dessert. Chocolate brownies can be soft and fudgy on the inside (see my favorite Fudge Brownie Recipe) or be more firm and cake like.

Although the same could be true for a blondie, a classic blondie recipe will be one where the inside of the cookie bars is soft and chewy. However, the outside will have a slight crunch to it when baked.

Add-Ins

Finally, there is one more common difference between the two, the addition of add-ins. Although many people add nuts and maybe chocolate chips to chocolate brownies that is typically all that is added.

On the contrary, blondie brownies almost always have something added to the batter before baking. The most common add-in includes baking chips.

White, butterscotch or even chocolate chips can be mixed into a blondie, making it more visually appealing. However you can also add bits of chopped up candy bars, toffee, and/or nuts if you prefer.

The visual appeal and of course the taste of the add-ins really stands out against the golden background of the blondies.

Easy Blondie Brownie Recipe

INGREDIENTS

  • 1/2 cup unsalted butter softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 cups all purpose flour

OPTIONAL INGREDIENT

  • 2 cups white chocolate chips

INSTRUCTIONS

Preheat oven to 350°F (177°C) and line a 9 × 13” baking pan with aluminum foil or parchment paper and spray with cooking spray. Set the pan aside while you prepare the batter.

In a medium size bowl whisk together the flour, salt and baking powder. Set the dry ingredients aside.

Place the softened butter and brown sugar in a mixing bowl. Use a hand mixer or stand mixer with the flat beater and mix until it becomes incorporated.

Add the eggs and vanilla and mix until you can no longer see any parts of the eggs. Stir in 1 1/2 cups of the white chocolate chips (if using).

Once the batter is prepared, add in your favorite baking chips, chopped candy or nuts for added flavor and texture.

Spread the batter in the prepared baking dish. Helpful tip – use the back of a wet silicone spatula or wet your hands to smooth the top in an even layer.

Sprinkle the remaining white chocolate chips on top (if using). Place the baking dish on the center rack of the preheated oven.

Bake Time

Bake the Easy Blondie Brownies for about 40-45 minutes until they start to turn golden. *See the frequently asked questions about the bake time if you are using a metal baking dish.

The cooked blondies should be golden brown on top but slightly jiggle when you take them out of the oven. As they cool they will firm up but still have that soft fudgy center that blondies are known for.

Once they are cool, remove the brownies from pan by pulling the parchment paper or foil upward and place on a large cutting board. Cut into desired size squares.

The smaller the bars are, the easier they are to eat. I am able to get 24 bars out of this recipe.

Frequently Asked Questions

1. How do I get the batter to spread easily in the baking dish?

Blondie Brownie batter is naturally thick and dense. Therefore, it won’t pour into the pan and spread out naturally.

You will need to dip the back of a silicone spatula into cold water and gently press the batter to the edges of the pan. Although, I find it just as easy to dip my hands in the water and spread it out.

Using your hands will also give you a feel if the batter needs to be thicker or thinner in certain areas.

2. What other add-ins can I put in the batter?

As mentioned above you can add all sorts of items to the batter to give it a different taste and texture. Here are some of my favorites:

  • white chocolate chips
  • chocolate chips
  • butterscotch baking chips
  • peanut butter chips
  • M&M candies
  • toffee bits
  • macadamia nuts
  • walnuts
  • cherries
  • blueberries

3. Why do my baked blondies look jiggly after baking?

After the 40-45 minutes of bake time, the top of the blondie brownies should be golden brown in color. However, when you take the baking dish out of the oven, the center will still be jiggly.

This is normal. Once they begin to cool, they will firm up a bit. However, remember, that this is a soft, chewy and more fudgy texture than a chocolate brownie.

4. I am using a dark metal baking dish, how do I adjust the cook time?

There is a huge difference between baking in a glass or metal baking dish. Metal heats up quickly and also cools down quickly after being removed from the oven.

On the contrary, when baking in a glass dish, it takes longer for the glass to heat up and also cool down. Although the sides will heat up faster than the bottom of the dish.

Therefore, if you are cooking in a glass baking dish, you can expect that the outside edges of the blondies will be more rounded when baked. In addition, it will take 40-45 minutes for them to be done.

However if you are using a metal baking dish you will notice two differences. First the outside edges will be flat and not rounded.

Second, the cook time will be less. Begin checking the doneness around the 25-30 minute mark if using a metal pan.

5. How do I store blondie brownies?

Store the blondie brownies in a closed container either at room temperature or in the refrigerator. If you store them in the refrigerator they will firm up more than if stored at room temperature.

However both are acceptable ways of storage and will give you that nice soft texture for several days.
