Sausage Hash Brown Bites are the perfect hand held breakfast, snack or appetizer to serve to your family and friends. Bite size bites that are made with ground sausage, frozen hash brown potatoes, cheese and baking mix.
They are fantastic to make ahead of time for a quick and easy breakfast on the go or as an addition to a brunch spread. However, my favorite time to serve them is at a tailgate party.
Because they can be served warm or at room temperature they can be set out on the table with the other food items. Then whenever there is a commercial or another break in the action, these little sausage hash brown bites can be eaten quickly and without a mess.
Best of all there are no utensils or plates required to enjoy these treats. Just like when you make Hash Brown Egg Nests, simply take a bite or pop the entire thing in your mouth.
They hold up well and won’t crumble apart when eaten. And you can even add a little dipping sauce to make them even more delicious.
You can use syrup as the dipping sauce if you are serving them for breakfast. Although, if you are serving them at a party, I would suggest dipping them in barbecue sauce or Ranch dressing.
However, they are so good on their own that dipping sauce is optional!
How to Make Sausage Hash Brown Bites Faster & Easier
If you have tried a similar recipe for making these little bites but found it too cumbersome or difficult, don’t worry! Here are a few helpful tips on how to get these prepared in a fraction of the time.
1. Use a stand mixer
When I first starting making these years ago I used to mix everything by hand with a silicone spatula. Not only did it take a long time, it also took a lot of effort.
First, to get everything to mix evenly I had to stir for what seemed like 10 minutes. Then it was nearly impossible for me to manually break up the frozen hash browns.
So I decided there must be an easier way! That is where my stand mixer comes into play.
Now I place all of the ingredients in the bowl of my stand mixer. Then I use the dough hook to mix everything together.
And in under 2 minutes, the sausage hash brown bites mixture is ready! This technique has been a game changer for me!
If you don’t have a stand mixer, you can use a hand mixer instead. However, you may need to clear out the beaters a few times during the mixing process.
2. Form the individual bites with a cookie scoop
After the mixture is ready, it is time to make the individual bites. I used to do this by hand by rolling the mixture into 1-2 inch size balls.
Although you can still do this, I prefer to use my medium or large cookie scoop to make the individual bites instead. This way my hands don’t get sticky and messy.
Another advantage of using a cookie scoop is that you get a consistent size of each sausage hash brown bite. This is important as it will allow them to bake evenly.
I prefer to use the medium size scoop when making them as an appetizer. Not only will they be the perfect size to pop them in your mouth, you will be able to make more.
However, if you are making them for a quick breakfast on the go or as part of a brunch spread, I suggest using the large cookie scoop. You want them to be big enough to satisfy yourself, your family or your hungry guests.
3. Use a Silicone Baking Mat for easy clean up
One of the best kitchen items that I have ever purchased is a silicone baking mat. I use it every time I pull out my baking sheet.
Not only does it make clean up a breeze, it also has saved me a ton of money! That is because I used to use parchment paper.
However, now instead of disposing of the paper and buying more, I can simply clean the baking mat and reuse it the next time.
So now that you know what you need to make them, let’s get to the actual recipe!
Sausage Hash Brown Bites

INGREDIENTS
- 1 lb ground sausage, uncooked
- 8-oz package cream cheese, softened
- 1½ cups Baking Mix (Bisquick or Generic Brand)
- 1½ cups finely shredded sharp cheddar cheese
- 15 oz. package frozen shredded hash brown potatoes
INSTRUCTIONS
The first step in making this recipe is to set the cream cheese out so that it can soften. It will take about 30 minutes for the bar to soften enough to be mixed with the other ingredients.
When you are ready to make the sausage hash brown bites, preheat oven to 400°F (200°C). Then line a large rimmed baking sheet with parchment paper or a silicone baking mat.
Set the baking sheet aside and prepare the sausage and hash brown mixture. Start by adding the uncooked ground sausage and softened cream cheese in the bowl of a stand mixer fitted with the dough hook attachment or in a large mixing bowl.
Using the stand mixer or a hand mixer, mix on low speed just until combined. Add the baking mix and continue to mix until the white powder is no longer visible.
Next add the finely shredded cheese and frozen hash browns to the bowl and mix until incorporated. Don’t worry if your hash browns are stuck in a frozen clump.
If they are, start the mixture on slow speed and the hash browns will quickly break apart. Then increase the speed to mix everything together.
Form The Balls
Once the mixture is well incorporated use a medium or large cookie scoop and place the balls on the prepared baking sheet. Or roll the mixture by hand to make 1-2 inch size balls.
Place the balls on the baking sheet, leaving 1/2 inch space between them. They will not expand much during the baking process.
Place the sausage hash brown bites in the oven and bake for 18–22 minutes or until the bites begin to brown. Then remove the pan from the oven and let them sit for 2-3 minutes.
Remove the bites from the pan and place them on a serving tray and serve immediately. You can add your favorite dipping sauce, such as syrup, barbecue sauce or Ranch dressing to the tray if desired.
Make Ahead Options
If you want to make this recipe ahead of time, there are two options.
1. Freeze Uncooked Sausage Hash Brown Bites
Make the recipe as instructed. Then place the formed balls onto the prepared baking sheet and place them in the freezer.
Once each ball is frozen, place them in a freezer safe container with wax paper between stacked layers.
Then when you are ready to bake them, pull them out of the freezer and place them directly in the preheated oven. Increase the baking time by a few minutes.
2. Freeze Them After They Are Baked
You can also freeze them after they have been baked. After they come out of the oven, place them on a cooling rack and let them cool completely.
Then place them in a freezer safe container. To reheat, simply pull them out of the freezer and pop them in the microwave for a minute for a quick breakfast on the go.
However, if you want to reheat an entire batch, place them on a baking sheet and heat on 350°F (177°C) until warmed through, approximately 15 minutes.

Notes
- You can make the balls as instructed and place them in the freezer and bake as instructed later. Or bake the sausage hash brown bites as instructed and then after they cool completely, flash freeze them and then place them in a covered container for a quick and easy breakfast on the go!
