Easy To Prepare – This is a straight forward recipe that requires no special skills or equipment. All you need are measuring tools, a cutting board and knife (to dice the chicken), mixing bowls, spatula, baking dish and a bag to crush the crackers.
Ready For The Oven In 10 Minutes – With the help of some short cut ingredients this recipe takes only minutes to prepare. Rotisserie chicken, frozen cubed potatoes and frozen sweet corn kernels make up the heart of the recipe. Then stir in the dairy products and seasonings and it is ready to be spread out in the baking dish. All that is left to do is put the crushed crackers on top.
The Flavor – Creamy casseroles can sometimes be bland in flavor. This is definitely not the case with this Million Dollar Chicken and Potato Casserole! The combination of ingredients and seasonings blend perfectly together and create a delicious flavor that will have you coming back for seconds.
Make Ahead Option – Want to save even more time? You can make this dish up to 2 days in advance. Follow the instructions and then instead of putting it in the oven, cover and refrigerate.
Although I sometimes leave off the topping until it is ready to go in the oven, it still bakes up fine with the topping added before going in the refrigerator. However I do not recommend storing this dish in the freezer because it contains dairy that will separate when frozen.
Ingredients Required
The Creamy Base:
Cream of Chicken Soup – I highly suggest using low-sodium or salt-free soup. And if you aren’t a fan of canned soup you can definitely made homemade cream of chicken soup.
Cottage Cheese – You may be surprised that cottage cheese helps to make up the creamy filling. Although it is best to use small curd cottage cheese as it will literally melt as it bakes.
Sour Cream – Regular, reduced-fat, or fat-free varieties will all work in this recipe.
Cream Cheese – You will need a half a block of cream cheese. However it must be at room temperature so you can mix it in with the other ingredients. Because I usually don’t have time to put it on the counter ahead of time, I put the cream cheese on a plate and microwave it at 15 second increments until it is just spreadable. It is a huge time saving tip for this Million Dollar Chicken and Casserole recipe.
Creole Seasoning – Use the same creole seasoning that you use to make Jambalaya. However be aware that the heat level can vary depending on brand of seasoning that you purchase. I use Tony Chachere’s Creole Seasoning and it gives the perfect amount of flavor without the heat.
Onion Powder & Garlic Powder – The staple ingredients in any casserole recipe.
The Heart of The Casserole:
Shredded or Diced Rotisserie Chicken – You will need 3 cups of shredded or diced cooked chicken. Although you could cook up a few chicken breasts, it is much easier to use the meat from a store bought rotisserie chicken.
Frozen Cubed Potatoes – I love the convenience of having a bag of frozen cubed potatoes in my freezer. I use them for breakfast, to make potato soup, individual servings of potato salad and in all sorts of casseroles. If the potatoes of frozen in a big clump be sure to chip them apart so that they can easily be mixed in the casserole.
Sweet Corn Kernels – You can use fresh, frozen or canned corn.
Chopped Fresh Parsley – Although I prefer fresh parsley, you can substitute 1 teaspoon of dried parsley if desired.
The Topping
Shredded Mozzarella Cheese – Once the Million Dollar Chicken and Potato Casserole gets spread in the baking dish, add shredded Mozzarella cheese on top. This not only adds another layer of flavor, but it also helps to adhere the crispy topping.
30 Round Buttery Crackers – Ritz like crackers are used to make the crunchy topping. You can crush them in a resealable plastic bag or use a food processor to make easy work of the process.
Unsalted Butter – Melt the butter and mix it with the crackers. If you want a more solid crust topping add 2-3 more tablespoons of butter than what the recipe calls for. However I prefer the topping to be more on the crumbly side.
Million Dollar Chicken and Potato Casserole Recipe

- 1 (10.5 ounce) can cream of chicken soup
- ½ cup cottage cheese
- ½ cup sour cream
- 4 ounces cream cheese, at room temperature
- 1 ½ teaspoons Creole seasoning
- ½ teaspoon onion powder
- 1 teaspoon garlic powder, divided
- 3 cups shredded rotisserie chicken
- 2 cups frozen cubed potatoes
- 1 cup frozen sweet corn kernels
- 1 tablespoon chopped fresh parsley
- 30 buttery round crackers (such as Ritz), crushed
- 4 tablespoons unsalted butter, melted
- 1 cup shredded mozzarella cheese
Garnish:
Diced green onions
INSTRUCTIONS (Million Dollar Chicken and Potato Casserole)
1. Preheat the oven to 350° F (175°C). Then spray an 11 x 7 inch baking dish with non-stick cooking spray. Set aside.
2. In a medium bowl add the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of the garlic powder and stir until well blended.
3. Add the chicken, potatoes, corn and parsley and mix until evenly coated. Place the mixture in the prepared baking dish and then smooth out the top with a silicone spatula.
4. Sprinkle the mozzarella cheese evenly over the casserole. Then set the dish aside while you prepare the topping.
5. In another medium size bowl add the crushed crackers, melted butter, and remaining 1/2 teaspoon garlic powder and then stir until the crackers are evenly coated.
6. Sprinkle the cracker mixture over top of the mozzarella cheese.
7. Place the baking dish in the preheated oven and bake for 30-35 minutes or until the edges of the casserole are hot and bubbly and the crackers are golden brown.
Garnish with diced green onions if desired.

Notes
- If your baking dish is completely filled to the top, place the baking dish on a foil lined baking sheet to catch any drippings.
- You can make this casserole ahead of time (unbaked) and without the topping, cover and freeze it for up to 3 months. I find it best to do this in an aluminum pan with a foil lined lid.
