Trust me, with this breakfast bowl recipe you’re in for a treat! So go ahead, surprise yourself of your loved ones with a breakfast they will want you to make over and over.

Why Is It Called a Lumberjack Breakfast?

So how did this delicious breakfast recipe get its name? Lumberjacks were workers in the logging industry who typically had physically demanding jobs, cutting down and transporting trees.

Therefore a hearty breakfast was essential for providing the energy needed to fuel their day, hence the name “Lumberjack Breakfast.”

Because this recipe is intended to be a large, hearty breakfast the recipe is designed to serve two people. However its generous portions could easily feed four, smaller (and maybe more normal) serving sizes.

Although, if you need to feed an entire family, this recipe is easily adaptable. Feel free to adjust the ingredients accordingly to accommodate more people.

Easy Recipe With The Help Of Pre-Made Ingredients

Lumberjack Breakfast Bowls are a breeze to prepare, thanks to pre-made ingredients like frozen home fries, pre-cooked bacon and sausage, and packaged cheese and gravy. These time-saving items allow you to focus on assembling the perfect breakfast bowl with very little effort.

However, if you prefer you can make everything by scratch and make it a truly homemade meal. But for a delicious meal made in a fraction of the time, take advantage of those store-bought short cuts that still taste delicious!

Frozen country style breakfast potatoes makes this recipe come together easy!

Ingredients Required

Home Fries – Home fries are cubed or sliced potatoes. They are different then hash browns which are grated potatoes. Home fries are preferred in this recipe as they are heartier and hold up well when combined with the other ingredients.

Bacon – Thick-cut bacon is best for this recipe as it provides a more substantial texture compared to regular bacon. However, you can switch up the flavor of the bacon and use maple, applewood or hickory bacon if you prefer.

Sausage – Instead of using ground sausage or sausage patties, sausage links are used in this recipe. Standard pork sausage links are ideal, but you can substitute chicken or turkey sausage links for dietary reasons if necessary. And for those who like their food a little spicy, consider spicy breakfast sausage links.

Scallions – Scallions or green onions, are milder and more delicate in flavor than regular onions, making them a better choice for this dish. However, if all you have in your kitchen is standard slicing onions, by all means you can use them.

Sharp Cheddar Cheese – Shredding your own cheese yields better melting cheese, but pre-shredded cheese works too. The robust flavor of sharp cheddar adds a great level of flavor to the dish, however feel free to use whatever cheese that you prefer.

sausage links and bacon

Pepper Jack Cheese – A little spice is perfect for a Lumberjack Breakfast Bowl, but you can use Monterey Jack for those who prefer a milder taste.

Sausage Gravy – Homemade sausage gravy is always an option, but using a jar or can of sausage gravy is a convenient shortcut.

Large Eggs – Cook the eggs however you prefer, from over-easy to scrambled they all work well in this recipe.

How To Assemble The Lumberjack Breakfast Bowl

Assembling the bowls is a simple process. You will be layering the ingredients which allows you to create not only a delicious but also a visually appealing meal.

Begin by evenly dividing the cooked home fries between two large, shallow bowls. Then add the cooked bacon and sausage pieces to each bowl, followed by a few diced scallions.

Next sprinkle on the shredded sharp cheddar and pepper jack cheese. Then, place your preferred style of cooked eggs on top of the cheese layer.

Finish the bowls off by pouring the warmed sausage gravy over the eggs, and garnish with the remaining diced scallions.

Feel free to add salt, pepper, hot pepper flakes, or hot sauce to taste for an extra kick of flavor.

What To Serve With Breakfast Bowls

Although this is a hearty and satisfying meal on its own, you can serve the meal with an array of complementary sides and beverages to make the morning even more special.

Of course every good breakfast is served with a pot of freshly brewed coffee or a glass of orange juice. Then you can add a side of toast, biscuits, or a buttery croissant to soak up any remaining gravy or egg yolk.

However for a lighter, more refreshing option, consider adding a fruit salad or a serving of yogurt with granola.

INGREDIENTS

  • 2 cups home fries
  • 4 slices of thick cut bacon
  • 4 breakfast sausage links
  • 2 scallions, divided
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Pepper Jack cheese
  • 1 cup jarred or canned sausage gravy
  • 4 large eggs

INSTRUCTIONS

To make the Lumberjack Breakfast Bowls start by cooking home fries according to the package directions. As the home fries cook, cook the bacon and breakfast sausages in another skillet placed over medium-high heat. (You can also cook them in the air fryer or microwave if you prefer).

Once the bacon and sausages are done cooking, remove them from the skillet and place on a paper towel lined plate. When they cool, cut the bacon and sausage links in 1/4-1/2 inch sections. Set aside.

Divide the cooked home fries between two large shallow bows. Evenly divided the sausage and bacon between the two bowls and place over top of the potatoes.

Dice one scallion (both the green and white portions) and evenly sprinkle over the potatoes, bacon and sausage. Then sprinkle 1/4 cup shredded sharp cheddar cheese and 1/4 cup pepper jack cheese over each bowl.

Cook The Eggs

Place a large skillet over medium-low heat and spray with non stick cooking spray. Cook the eggs until they are over easy (or however you prefer your eggs).

Cook the eggs however you prefer and then place them on top of the other breakfast items.

While the eggs cook, heat the sausage gravy in the microwave at 30 second increments until hot throughout. Or you could also heat the gravy in a saucepan over medium heat until warmed through.

Place 2 eggs in each bowl, over top of the cheese. Then pour the hot sausage gravy over top of the eggs.

Garnish each Lumberjack Breakfast Bowl with the remaining diced scallion. Season with salt, pepper, hot pepper flakes and/or hot sauce as desired.

Enjoy! Mary
