If you are looking for a easy side dish recipe to make at your holiday gathering than you should definitely make this Easy Corn Casserole. It is one of the most popular side dishes served at both Thanksgiving and Christmas.
Best of all, it only takes a few minutes to prepare and requires only 7 common ingredients. Not to mention that is an inexpensive recipe to make.
Even with today’s rise in grocery costs, this recipe can be made for under seven dollars. Of course, that cost will fluctuate depending on where you live.
However, these common ingredients can not only be found at your local grocery store. They can also easily be found at the neighborhood dollar store as well.
In an effort to save money on groceries I have looked for alternatives to my weekly grocery shopping trips. And I have found that there are some items that are less expensive at other stores.
Canned goods and Jiffy corn muffin mix are two great examples. If they are not on sale for the 10 for $10 cost, I will head to the dollar store or Aldi’s and purchase these items.
There I can get them for a dollar a piece, if not less. It is a great way to save money when the cost at the grocery seems to keep going up.
Homemade Corn Muffin Mix
However, if you are in a pinch, and don’t have time to run to the store, you can make your own corn muffin mix. Mix up a little cornmeal with flour, sugar, baking powder and salt and you are all set!
For those who want to make their own I have included the exact measurements in the recipe below. However there is another way that you can save money.
Instead of making your own, purchase the larger bulk size of the corn muffin mix. I purchase a large box of the popular mix at a wholesale club.
Then when I need to use the mix to make cornbread, mini muffin corn dogs or corn casserole, it is always on hand. A standard box of Jiffy corn muffin mix yields 1 1/2 cups of the dry mixture.
Therefore, when a recipe calls for a box of Jiffy corn muffin mix, measure out 1 1/2 cups of the bulk ingredients and you are all set! It is a great way to save money and have the mix on hand whenever you need it.
Cream Style Corn
This easy corn casserole recipe calls for both canned sweet corn and cream style corn. You can use the canned varieties or make your own from fresh corn kernels.
Every summer I will buy a large quantity of corn on the cob. After enjoying some fresh Grilled Sweet Corn I will process the other ears into packets of frozen corn kernels.
This way I always have fresh sweet corn on hand. And if needed, I can make my own cream style corn with the following ingredients:
- 3 tablespoons butter
- 1 tablespoons all-purpose flour
- ¼ cup heavy cream, room temperature
- 2 cups corn kernels , frozen, fresh or canned; rinsed and drained
- ½ tablespoon sugar
- salt and pepper, to taste
Start by melting the butter then whisk in the flour. Once a roux forms slowly add the heavy cream and whisk until well incorporated.
Add the corn kernels, sugar, salt and pepper. Bring the mixture to a boil and then reduce the heat to simmer for 10 minutes.
And there you have homemade cream style corn that you can use as a side dish or add to this recipe.
Easy Corn Casserole Recipe

INGREDIENTS
- 1 Box of Jiffy Corn Muffin Mix (*see note below for homemade mix)
- 1/2 cup melted butter
- 15 ounces whole kernel corn, drained
- 15 ounces creamed corn, undrained
- 1 large egg, beaten
- 1 cup shredded cheddar cheese
- 1 cup sour cream
*HOMEMADE JIFFY CORN MUFFIN MIX INGREDIENTS
If you want to make your own Jiffy Corn Muffin Mix here are the ingredients that you can whisk together:
- 2/3 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
INSTRUCTIONS
Preheat the oven to 350°F (177°C). Place the butter in an 8 x 8 inch baking dish and melt it in the microwave. Once melted, move the butter around to coat the sides of the baking dish.
You could also melt the butter in a separate dish or on in a skillet on the stove. Then add the melted butter to the baking dish, spreading it all over the bottom.
To the baking dish, add the Jiffy corn muffin mix, corn, cream style corn, egg, sour cream and half of the cheese. Mix well.
Sprinkle the remaining cheese on top in an even layer. Bake uncovered for 45-55 minutes or until the easy corn casserole is firm in the center and the cheese melts and starts to turn light brown.
Remove the casserole from the oven and let it sit for 5 minutes so that it can firm up before serving.
Double The Recipe
If you want to make a bigger batch to serve a crowd this recipe can be easily doubled. Then bake it in a 9 x 13 baking dish for the same amount of time.

Ingredients
1 Box of Jiffy Corn Mix (OR the following dry ingredients)
- 2/3 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Remaining Ingredients
- 1/2 cup melted butter
- 15 ounce whole kernel corn, drained
- 15 ounce creamed corn, entire contents
- 1 egg, beaten
- 1 cup shredded cheddar cheese
- 1 cup sour cream
Instructions
- Preheat the oven to 350°F (177°C).
- Place the butter in an 8x8 inch baking dish and melt in the microwave.
- Once melted, move the butter around to coat the sides of the baking dish.
- To the baking dish, add Jiffy mix, corn, creamed corn, egg and half of the cheese. Mix well.
- Place dollops of sour cream on top and swirl into the top layer of the corn mixture.
- Add remaining cheese on top.
- Bake uncovered for 45-55 minutes or until firm in the center and lightly browned.
