I actually came up with this recipe after my Bubble Up Pizza Casserole turned out to be such a huge success with my family. I wanted to try something different but equally delicious and easy to make.

This Chicken Bacon Ranch version uses the same concept – bits of biscuit dough mixed with delicious ingredients and baked into a casserole. However, this time instead of using classic pizza ingredients I combine the classic combination of ingredients including chicken, bacon and ranch dressing.

It’s hearty, satisfying, and perfect for busy nights when you don’t have a lot of time to spend in the kitchen. But what I love most about this recipe is how adaptable it is.

You can tweak it based on what you have at home or your family’s preferences. Whether you’re making it as a quick dinner for your family or as a dish to share at a potluck, it’s bound to be a crowd-pleaser. Plus, it only takes a handful of ingredients and minimal prep time, which is always a win in my book.

Cooked Chicken Options

This casserole starts with two cups of diced cooked chicken, and there are plenty of ways to make that happen. If you have leftover rotisserie chicken, it’s a great time-saver and adds an extra layer of flavor to the dish.

Grilled or baked chicken breasts work just as well, especially if you’re cooking the chicken ahead of time for meal prep. In a pinch, you could even use canned chicken, but I’d recommend giving it a quick rinse and drain to cut down on any overly salty taste in your Chicken Bacon Ranch Bubble Up Casserole.

Sour Cream Alternatives

When it comes to sour cream you can use any variety, from full fat to fat free. And if sour cream isn’t your thing, don’t worry, there are other options. Plain Greek yogurt is a great substitute and is a healthier option that will still give the casserole that creamy texture.

You can also use a combination of room temperature cream cheese and a splash of milk for a richer result. Just make sure whatever you use is the same consistency of sour cream to coat the biscuit pieces properly.

Ranch Dressing

This recipe calls for prepared ranch dressing, not the dry seasoning packets. The bottled dressing brings that creamy consistency you need to blend all the ingredients together.

I prefer to use a brand I already know my family likes because the ranch flavor is the backbone of the dish. Jus like with the sour cream you can use reduced fat or fat free to help decrease the calorie content if you prefer.

Cooked Bacon Options

Bacon adds such an irresistible smoky flavor to this casserole. You’ll need about eight slices of cooked bacon, chopped into bite-sized pieces.

You can cook it fresh, but I also love using precooked bacon to save time. Many stores sell fully cooked bacon that just needs a quick warm-up in the microwave or skillet. It’s a great option for busy nights when you want to keep things simple.

You can even use real bacon-bits in this Chicken Bacon Ranch Bubble Up Casserole. It is a quick and easy way to get dinner on the table quickly. Just be sure to not use the red-colored imitation bacon bits.

What Type of Cheese for Chicken Bacon Ranch Bubble Up Casserole

Shredded cheddar is the star of the show here, but you can experiment with other types of cheese depending on what you and your family prefer. A sharp cheddar gives the casserole more of a bold flavor, while a mild cheddar keeps it more kid-friendly.

For a twist, try mixing in some Monterey Jack or Colby cheese. You could even sprinkle a bit of Parmesan on top for extra flavor. Just be sure to stick to about 8 ounces total, so the casserole doesn’t get overly cheesy (if there’s such a thing).

As always, it is best to use freshly grated cheese as the packages of pre-shredded cheese contain an anti-caking agent that prevents it from melting smoothly. However, I am a realist, and know that most of us (including me) will use the pre-shredded cheese. It may not make the casserole look the best, but it is still delicious.

What Biscuits To Use In Chicken Bacon Ranch Bubble Up Casserole

This casserole calls for 10 homestyle biscuits, which is why I recommend buying two of the smaller 6-ounce cans that each have 5 biscuits. The smaller cans make it easy to get the perfect amount without having leftover biscuits you don’t need.

The biscuits get cut into pieces and mixed with the other ingredients. As they bake they become golden and fluffy inside the casserole. It’s one of the reasons this dish has that “bubble up” effect – it’s all thanks to those biscuits puffing up as they bake.

INGREDIENTS

  • 2 cups diced cooked chicken
  • ¾ cup sour cream
  • ¾ cup prepared ranch dressing
  • 8 slices cooked bacon, chopped
  • 8 ounces shredded cheddar cheese, divided
  • 2 (6-ounce) cans refrigerator homestyle biscuits (10 biscuits total)
  • Fresh chopped parsley (optional, for garnish)

INSTRUCTIONS

  1. Preheat Your Oven: Set it to 375°F and prepare a 9×13-inch baking dish with non-stick cooking spray.
  2. Mix the Ingredients: In a large bowl, combine the diced chicken, sour cream (or your alternative), ranch dressing, half of the shredded cheese, and the chopped bacon. Stir it all together until everything is evenly coated.
  3. Add the Biscuits: Cut the biscuits into 8 pieces each, then gently fold them into the chicken mixture. Make sure all the biscuit pieces are well-coated.
  4. Assemble the Casserole: Spread the mixture evenly into the prepared baking dish, then sprinkle the remaining cheese on top.
  5. Bake: Place it into the oven and bake for 25-30 minutes. You’ll know it’s ready when the edges are bubbling, and the cheese is melted and lightly golden brown in spots.
  6. Cool and Serve: Let the casserole cool for about 10 minutes before serving. Garnish with fresh parsley if you’d like, and enjoy!

Ingredients

Instructions

  6. Remove the baking dish from the oven and allow the casserole to cool for 10 minutes before serving,
  7. Garnish with chopped parsley if desired.

Notes

  • The small cans of refrigerator biscuit dough contain 5 biscuits and the standard size cans have 8 biscuits. For this recipe you use 10 biscuits so I prefer to buy the two smaller cans.
  • You can make the casserole ahead of time, cover and refrigerate for up to 24 hours.
