Air Fryer Vegetarian Quesadillas – A Quick and Easy Recipe

We eat a lot of quesadillas in our house. That is because everyone can customize their own with their favorite ingredients and that means everyone is happy!

The little ones love to make them with just cheese. And the meat eaters in the family love to throw some shredded chicken, steak, or even pulled pork inside theirs.

And when it comes to feeding our vegetarian friends we stick to beans, cheese and veggies. However, I think all of us like to serve them with salsa, sour cream and of course guacamole.

However, this time of the year, we get a lot of emails asking for recommendations for recipes that can be served on Fridays during Lent. Along with our Vegetarian Enchilada Casserole, we always recommend Air Fryer Vegetarian Quesadillas.

Of course, just like when making any quesadillas, you can adapt the ingredients as you see fit. My husband loves hot and spicy foods. Therefore, he always puts diced jalapeños in his.

As for me, I stick to the refried beans, onions, peppers and cheese. And on occasion, if we have any leftover cowboy caviar, I will add that in as well.

But no matter what you decided to use as the filling, they cook up perfectly in an Air Fryer. We have made this in both our Ninja Foodi Air Crisper and our Air Fryer Oven and the results are always amazing.

Air Fryer Vegetarian Quesadillas

Ingredients

Flour tortillas
Cooking spray
Refried beans
Diced onions
Diced red peppers
Optional – Diced jalapeños
Mexican or Monterey Jack cheese, divided

The base of this recipe starts with refried beans. Spread a layer of the beans on one flour tortilla and then spray the bottom with oil before placing it in the air fryer basket.

*We definitely recommend using flour tortillas for this recipe instead of corn tortillas. The flour tortillas cook much better when making quesadillas in the air fryer.

Not only does the cheese adhere to the flour tortillas, they are also are heavier than corn tortillas. That means they are less likely to fly around the air fryer during the cooking process.

Instructions

The first step in making this recipe is to preheat your air fryer to 380°F for 3 minutes.

Although you can use whatever ingredients that you prefer, I highly recommend you add a layer of cheese on top of the beans and then add the vegetable toppings.

Although not all brands require you to preheat the air fryer before adding the food, it is highly recommended to do so for this recipe. It helps the filling in the tortillas to get hot quickly and adhere to the shells.

While the air fryer is heating up, prepare your vegetarian quesadillas. Begin by spreading the refried beans on one side of a tortilla.

Continue to spread the beans to within 1/8 inch of the edges. Then carefully spray the bottom of the tortilla generously with olive oil cooking spray and place it, bean side up, in the air fryer basket.

Next sprinkle half of the cheese over the beans. Then sprinkle the diced onions and peppers over the refried beans.

The final layer must consistent of cheese so that the top tortilla can adhere to the surface.

Finally, spread the remaining cheese over top and place second tortilla over the fillings. Before closing the air fryer, spray the top with additional cooking spray so that it can crisp up and lightly brown during the cooking process.

Air fry for about 6-8 minutes or until the cheese inside the vegetarian quesadillas is melted and tortillas are crisp. Carefully remove the quesadilla from the basket and let sit for a couple of minutes before flipping onto a plate.

Serve with salsa, guacamole, and/or sour cream. Enjoy!

Crispy Vegetarian Quesadillas that are made in the air fryer for an easy to make appetizer or dinner recipe.

Ingredients

  • 2 (6-7 inch) flour tortillas
  • cooking spray
  • 1/4 cup refried beans
  • 1 tablespoon diced onions
  • 1 tablespoon diced red peppers
  • 1 teaspoon diced jalapeños (optional)
  • 1/2 cup shredded Mexican or Monterey Jack cheese, divided

Instructions

  1. Preheat air fryer to 380°F (190°C) for 3 minutes.
  2. Spread refried beans on one tortilla within 1/8 inch of the edges. Then spray the bottom of the tortilla generously with olive oil cooking spray and place flat in air fryer basket.
  3. Spread half of the cheese over the beans. Then sprinkle the diced onions and peppers over the refried beans.
  4. Spread the remaining cheese over top and place second tortilla over the fillings and spray the top with cooking spray.
  5. Air fry for about 6-8 minutes or until cheese is melted and tortillas are crisp.
  6. Let sit for a couple of minutes before flipping onto a plate.
  7. Serve with salsa, guacamole, and/or sour cream.
