This recipe is flexible when it comes to the type of sausage you can use. You can use:
- Smoked sausage
- Kielbasa
- Turkey sausage
- Chicken sausage
- Or even andouille if you want a little spice
The sausage gives off flavor as it cooks, and that helps season the green beans and potatoes without having to add a bunch of extra stuff. If you’re using sausage links, just slice them into rounds before putting them in the crock pot.

2. Potatoes
Fresh new potatoes or baby red potatoes work great here because they hold their shape during the long cooking time. You can leave the skins on – just give them a rinse and cut any large ones in half.
If you don’t have new potatoes, Yukon golds are a good second choice. Avoid using russet potatoes, as they tend to fall apart and get mushy after several hours in the slow cooker.
3. Fresh or Frozen Green Beans?

- 1 lb smoked sausage, sliced
- 1 lb fresh green beans, trimmed and snapped in half
- 1½ lbs baby red or Yukon gold potatoes, halved or quartered
- ½ cup chicken broth or water
- 1 small onion, chopped (optional)
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- 2 tbsp butter (optional)
INSTRUCTIONS:
1. Place potatoes in the bottom of the crock pot.
2. Add green beans on top of the potatoes.
3. Layer sliced sausage over the green beans.
4. Sprinkle in garlic, onion, salt, pepper, and red pepper flakes.
5. Pour in broth or water.
6. Dot with butter, if using.
7. Cover and cook on low for 6–8 hours or high for 3–4 hours, until potatoes are tender.

Storing Leftovers
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it up in the microwave or on the stovetop until heated through. You may want to add a splash of water or broth if the potatoes have soaked up all the liquid.
This dish also freezes well, although the potatoes can get a little soft after thawing. If you plan on freezing it, let it cool completely and store in freezer-safe containers for up to 3 months.
