When it comes to the most popular recipes in October, it is hard to find one that doesn’t include Pumpkin Spice, including this Pancake recipe. Pumpkin flavored fluffy pancakes that are cooked until they are golden brown on each side.
Once they come off the griddle add a pad of butter between each pancake and then drizzle the top with warm maple syrup. But don’t stop there! Make them even better by topping them with whipped cream and chopped nuts or chocolate chips.
Serve them with a few slices of bacon and some warm apple cider or a pumpkin spice latte and you have a classic Autumn breakfast that the entire family will love. The best part of all, they are super easy to make with just a few basic ingredients.
Ingredients Required For Pumpkin Spice Pancakes
The number of ingredients will vary depending on if you want to make your pancake batter from scratch or if you want to start with a store-bought pancake mix. I have included both options below, but in general you will need the following ingredients:
1. Pancake Mix
You can use whatever brand of pancake mix that you prefer. I have tested this recipe with a variety of mixes and they all turn out great.
However if you prefer to make your own pancake mix you can still turn them into Pumpkin Spice Pancakes. Although I typically use this Homemade Pancake Mix Recipe, I like to switch up the ingredients for this specific recipe.
The biggest difference is that I use brown sugar instead of granulated white sugar to give it more of a deep caramel flavor. Therefore, if you don’t want to use a pancake mix just be sure to have all purpose flour, brown sugar, baking powder and salt on hand.
2. Pumpkin Puree
Pumpkin puree will be used as one of the wet ingredients to help flavor the pancakes. Although it also serves another purpose.
Pumpkin can replace egg in standard baking recipes. Therefore there is no egg required to make pumpkin spice pancakes.
However, be sure that you use pure pumpkin puree and not pumpkin pie filling.
The two products are often stocked next to each other on grocery store shelves, especially this time of the year. However, the two products are not interchangeable.
Pumpkin puree is simply pumpkin (or a variety of winter squash) that have been cooked down and pureed. No other ingredients are added.
Pumpkin pie filling, on the other hand, is a mixture of pumpkin puree, spices and other ingredients that once baked turn into a creamy pie filling. The cans look very similar to each other, however the two are not interchangeable.
For this recipe you will need pumpkin puree which is sometimes also labeled as 100% pure pumpkin.
3. Pumpkin Pie Spice
To get that classic pumpkin flavor, pumpkin pie spice is added to the batter. You will need 1 teaspoon of pumpkin pie spice, but if you like a lot of pumpkin flavor you can add an additional 1/2 teaspoon.
Although I have pumpkin pie spice in my kitchen this time of the year to make pumpkin pie, pumpkin bread and pumpkin cookies, there are times that I run out of the specialty spice. However, you can still make pumpkin spice pancakes.
To replace the 1 teaspoon of pumpkin pie spice use: use ¾ teaspoon cinnamon and ¼ teaspoon of either ginger, allspice, cloves or nutmeg.
4. Pure Vanilla Extract
The final ingredient is pure vanilla extract. Add a teaspoon to your pancake batter and the warm vanilla flavor will enhance the flavor of the pumpkin spice.
The Keys To Making Perfect Pancakes
Now that you know what ingredients that you need to make pumpkin spice pancakes, it is time to know the keys to making perfect pancakes. And it all starts with mixing the batter.
1. Do NOT OVER MIX The Batter
The first key key to making the pancakes to turn out light and fluffy is to mix the ingredients just until incorporated. That means that there will still be small clumps in the batter when you are ready to cook the pancakes.
Too much mixing causes the pancakes to become very dense and flat. Therefore, use a whisk and just mix just until the dry ingredients can no longer be seen in the batter.
Then let the batter sit, undisturbed for 10 minutes before cooking the pancakes.
2. Heat The Pan Before Cooking
Before pouring the pancakes in the skillet or griddle make sure it is preheated. However, not too high. You want the heat for your non-stick skillet or pan to be set at medium heat.
If you heat it any higher than that and then add butter or non-stick cooking spray to the pan, it will burn the fat/oil. This will lead to the pancakes becoming too brown on the surface.
3. Flip Only Once
The biggest mistake when it comes to cooking pancakes is flipping them too many times. Once you pour the batter in the pan, let it cook until the outer edges are becoming firm and the entire top surface is beginning to bubble.
Then use a flat, non-stick spatula to flip the pancakes over. Continue to cook until the bottom side is golden and the pancakes are cooked through.
Pumpkin Spice Pancakes With Pancake Mix

INGREDIENTS
- 2 cups complete pancake mix
- 1 ½ cups water
- ⅔ cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1 teaspoon pure vanilla extract

INSTRUCTIONS
In a medium bowl, whisk together the pancake mix, water, pumpkin puree, pumpkin pie spice and vanilla. Stir until combined but don’t over mix.
It is okay to have a few lumps in the batter. Let the batter sit for 5-10 minutes.
Heat a non-stick pan or griddle to medium heat. Spray with cooking spray or coat the surface with butter.
For each pancake pour 1/4 cup of batter onto the hot surface and cook for 2-3 minutes on each side, or until the edges are bubbly and the center is beginning to firm up.
Flip and cook on the other side for an additional 2-3 minutes, or until golden brown on the surface and the center is cooked through.
Serve immediately with your favorite toppings.

HOMEMADE PUMPKIN SPICE PANCAKE RECIPE
If you prefer to skip the pancake mix, you can make your own homemade pancakes instead by following the ingredients and instructions listed below.
Ingredients:
- 1 1/4 cup all purpose flour
- 2 Tbsp brown sugar
- 2 tsp. baking powder
- 1/4 tsp salt
- 1 tsp pumpkin pie spice
- 1 cup milk
- 1/2 cup pumpkin puree
- 1 large egg (optional)
- 1 teaspoon vanilla extract
Instructions:
- In a large mixing bowl, whisk together flour, brown sugar, baking powder, salt, and pumpkin pie spice. Set aside.
- In another bowl whisk the milk, pumpkin puree, egg (if using) and vanilla extract until well incorporated.
- Add the wet ingredients to the dry ingredients and whisk until just combined. It is okay to have a few lumps in the batter.
- Continue to cook as instructed in the above recipe.
