One Skillet Chicken Fajitas Recipe – An Easy Weeknight Meal

If you are searching for a delicious, easy to make, one skillet meal you are going to love this Chicken Fajitas Recipe. In fact, after you make it the first time it may become one of your favorite weeknight meals.

Strips of chicken coated in an easy homemade fajita seasoning and cooked until tender and juicy. Then thin slices of peppers and onions are sautéed until just tender, yet still firm.

Toss everything together and you have a delicious meal that is ready to serve. Place the chicken and veggies in a tortilla shell and add your favorite toppings for a classic Mexican dish.

Although if you want to keep your meal low carb, eat the meat and vegetables as a stand alone main dish. Or serve it with cauliflower rice for a delicious meal that you can enjoy without the added carbohydrates.

No matter how you choose to eat it, I am sure you will enjoy both the flavor and texture of this easy to make meal. Best of all, you don’t even have to go to the store to pick up a packet of fajita seasoning.

Instead, with just a few simple spices that you most likely already have in your spice cabinet, you can make your own seasoning. Not only is it easy, it is healthier for you as there are no additives or preservatives included.

Easy Homemade Fajita Seasoning

With just 4 common spices and a little salt and pepper, you can make your own homemade fajita seasoning. Not only can you use the same seasoning to make this one skillet chicken fajita recipe you can also use it to make Sheet Pan Steak Fajitas.

The seasoning recipe below is the equivalent to one fajita seasoning packet. However, you can also make it in bulk and store it in an air tight container for later use.

Then you will have it on hand whenever you need it. Here are the ingredients that you will need:

  • Smoked paprika
  • Chili powder
  • Cumin
  • Dried oregano
  • Kosher salt
  • Ground black pepper

Smoked paprika is the main ingredient in fajita seasoning. It is one of my favorite spices and one that I use a lot when seasoning meat for the smoker, or when making Air Fryer Chicken Breasts.

In fact, I use it so often that I purchase a 1 lb. Bag of Smoked Paprika and keep it in my pantry. This way I know that I will always have it on hand when I need it.

This recipe calls for 2 tablespoons of smoked paprika. Then 2 teaspoons each of chili powder, cumin, and dried oregano.

Add in the Kosher salt and ground black pepper to taste and you have homemade fajita seasoning. It really is that easy!

Ways To Serve One Skillet Chicken Fajitas

Classic Chicken Fajitas: The most traditional way to serve chicken fajitas is on warm tortillas. Then customize each fajita with the toppings of your choice, such as sour cream, guacamole, salsa, and shredded cheese for a delicious and satisfying meal.

Fajita Bowls: For a healthier option, skip the tortillas and serve your chicken fajitas in a bowl with rice, black beans, and avocado. However if you want to keep it low-carb serve it over cauliflower rice.

Fajita Salad: Another healthy option is to serve your chicken fajitas over a bed of fresh greens with diced tomatoes, cucumbers, cheese and a tangy lime dressing.

Fajita Wraps: Wrap your chicken fajitas in a large tortilla shell with guacamole, lettuce and cheese. Or make it a lettuce wrap for a low-carb, gluten-free option.

Fajita Quesadillas: Make a quesadilla with your chicken fajitas and add cheese and jalapeños for an extra kick of flavor. Then top the quesadilla with sour cream, salsa, and guacamole.

One Skillet Chicken Fajitas Recipe

INGREDIENTS

  • 2 tablespoons extra virgin olive oil
  • 1 1/2 pounds boneless chicken breast or thighs, thinly sliced
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons dried oregano
  • kosher salt and black pepper
  • 2 tablespoons salted butter
  • 3 cloves garlic, chopped
  • Red pepper flakes, to taste
  • 1 yellow onion, sliced
  • 2 bell peppers, sliced
  • Juice of 1/2 lime

For Serving:

  • Tortilla shells
  • Cotija cheese
  • Salsa
  • Cilantro
  • Guacamole

INSTRUCTIONS

To make one skillet chicken fajitas you must first coat the chicken pieces in the homemade fajita seasoning with a little olive oil. Do this by adding the olive oil, chicken, paprika, chili powder, cumin, oregano, salt, and pepper in a large bowl and then toss to coat.

Then set the skillet over medium-high heat. Once the skillet is hot dump the entire contents of the bowl with the chicken into the skillet.

Cook the chicken until it is seared on all sides and cooked to an internal temperature of 160°F when checked with an instant read digital thermometer. This will take approximately 8-10 minutes.

Then add the butter, garlic, and chili flakes to the skillet and cook for 1 minute. Pour the contents from the skillet into a clean bowl.

In the same skillet, add the onions and cook for 5 minutes. Then add the bell pepper strips and season with salt and pepper to taste.

Cook the peppers until they are tender, approximately 5 minutes. Then pour the chicken contents back into the skillet and toss to combine until the chicken is warm.

Sprinkle the top of the contents with the juice of a half a lime. Then serve the chicken and veggies in warm tortillas. Top with salsa, Cotija cheese, chopped cilantro, and/or guacamole.
