- 2 pounds ground beef
- 1 ounce packet taco seasoning plus water listed on the back or my homemade taco seasoning
- 16 ounce can large biscuits
- ½ cup sour cream
- ½ cup mayonnaise
- 8 ounces cheddar cheese, shredded and divided
- 1 medium onion, halved and sliced into thin strips, divided
- 1 medium red bell pepper, halved and sliced
- 2 medium tomatoes sliced
- 4 ounces canned sliced Jalapeno peppers
INSTRUCTIONS – John Wayne Casserole
1. Prepare the Biscuit Crust:
- Preheat your oven to 350°F and spray a 9 x 13-inch baking dish with non-stick cooking spray.
- Arrange the biscuits in a single layer at the bottom of the baking dish. Press them down to form a crust, making sure to join the edges and press the dough halfway up the sides of the dish.
- Bake the biscuit crust for 12-15 minutes, or until it’s light golden brown. Remove it from the oven and set it aside. Leave the oven on.
2. Cook the Ground Beef:

John Wayne Casserole
Ingredients
- 2 pounds ground beef
- 1 ounce packet taco seasoning plus water listed on the back or my homemade taco seasoning
- 16 ounce can large biscuits
- ½ cup sour cream
- ½ cup mayonnaise
- 8 ounces cheddar cheese, shredded and divided

Instructions
Preheat oven to 350°F and spray a 9 x 13 inch baking dish with non-stick cooking spray. Set aside.
Make a biscuit crust in the prepared baking sheet by placing the biscuits evenly spread out in bottom of the pan in a single layer. Press the biscuits down, joining them together, pressing the dough halfway up the sides of the pan.
Bake in preheated oven for 12-15 minutes or until the dough is light brown Remove the baking dish from the oven and set aside (leave oven on).
While biscuits are baking, cook the browned ground beef until no longer pink. Drain and return the meat to the skillet.
Add the taco seasoning and water to the beef, and cook according to the taco seasoning packet instructions Transfer cooked taco meat to a bowl and set aside.
Lightly wipe out pan and saute half of the onions and bell peppers until slightly tender. Remove from the heat.
In a separate bowl, combine sour cream, mayonnaise, half of the cheddar cheese, and half of onions. Stir well and set aside.
On top of baked biscuit crust, layer ingredients in the following order: taco meat, tomato slices, bell pepper and onion mixture, Jalapeno peppers, sour cream mixture and sprinkle with remaining shredded cheese.
Bake uncovered for 30-40 minutes or until edges of dough are lightly browned and cheese is melted.
