Homemade blueberry waffles is the perfect breakfast dish to make on a laid-back Saturday morning. They not only look elegant, but they are also easy to make.
And if you have little ones in the house, it is a fun way to get them involved with making breakfast. From measuring ingredients to pouring the batter onto the waffle maker there is job for everyone.
Although this is a great family breakfast recipe, it is also a great addition to any breakfast or brunch when you are celebrating something special. Serve them on Easter morning, Mother’s Day, Father’s Day or start any birthday off right with these mouth watering waffles.
However instead of pulling out a box of pre-made waffle mix, we are going to make them from scratch. With just a few basic pantry and refrigerator items you can have breakfast made in no time!
Then top the homemade waffles with maple syrup, whipped cream, or fresh fruit. If you are lucky enough to have any leftovers, they can be frozen and reheated for a quick and easy breakfast on busy mornings.
However, before you pull out the waffle maker and get started there are a few keys to making sure that the waffles are fluffy on the inside and crispy on the outside each and every time that you make them.
The Keys To Making Homemade Blueberry Waffles
There is nothing more disappointing on an early morning than to take a bite into a waffle that is soggy and dense. However by following the following tips you can make sure that your waffles are perfectly cooked.
1. Baking Powder
Baking powder is a key ingredient in waffles that helps them rise and become fluffy. However, make sure your baking powder is fresh and not expired, as this will affect the quality of your waffles.
2. Separate Egg Whites and Yolks
Separating the egg whites and yolks allows you to beat the egg whites until they form stiff peaks, which adds air to the batter and makes the waffles fluffy. Below I have described the process of how to separate the eggs, how to beat them until the right consistency is achieved, and when to add them to the batter.
3. Don’t Over Mix The Batter
Over mixing the blueberry waffle batter can cause gluten to form, which will make your waffles tough and chewy instead of fluffy. Therefore, just like when making Homemade Pancakes mix the batter just until all the ingredients are incorporated.
4. Let The Batter Rest
Let the batter rest before cooking. Letting the batter rest for 10-15 minutes allows the gluten to relax and helps the waffles become fluffier.
5. Use A Hot Waffle Iron
Using a hot waffle iron ensures that the batter cooks quickly and evenly, which helps the waffles become fluffy. In addition, the outside of the waffles will become nice and crisp.
6. Don’t Over Cook The Waffles
Cook the waffles until they are golden brown on the outside and cooked through on the inside, but not too long. Over cooking can cause the waffles to dry out and become hard.

Why Separate Egg Whites
Even though the egg yolk and egg white end up in the homemade blueberry waffle batter together, by separating them first, you can prepare them differently. By whipping extra air into the egg whites, you will create a light and delicate foam that carries that air into the batter.
How To Separate Egg Whites
Crack the egg in half over a bowl and open it slowly, making sure not to drop the yolk in the bowl. Then carefully, pass the yolk back and forth between the two halves of the shell, letting the egg white drip into the bowl.
Once you get most of the egg white into the bowl put the egg yolk in a separate bowl. Then whisk the egg yolks until they are uniform in color. Set them aside and beat the egg whites.
Beating Egg Whites
Once you have the egg whites separated, it’s time to whip them up. With an electric hand mixer, beat the egg whites until they becomes frothy.
Keep whipping until the foam can stand on its own into stiff peaks. Be patient as this can take several minutes.
Adding The Eggs To The Batter
The egg yolks will be added with the rest of the waffle ingredients. However, the egg whites are folded into the batter right before the blueberry waffles get poured into the hot waffle iron.
The key here is to fold the egg whites and not whisk or mix them in too vigorously. Too much mixing will release the air, defeating the point of whipping them until stiff peaks are formed.
Fresh vs. Frozen Blueberries
When making homemade blueberry waffles it is best to use fresh blueberries as fresh blueberries have a better texture and flavor. However, both fresh and frozen blueberries can be used to make blueberry waffles.
Fresh blueberries are firmer and juicier than frozen blueberries, and they have a sweeter and more pronounced flavor. However when using fresh blueberries, be sure to rinse them thoroughly and make sure that they are completely dry before adding them to the batter.
Frozen blueberries are a convenient option, as they are available year-round and can be stored in the freezer for long term use. However, frozen blueberries can be more watery and less flavorful than fresh blueberries, and they can turn the batter purple or blue.
To use frozen blueberries in waffles, it’s best to thaw them first and drain off any excess liquid before adding them to the batter.

INGREDIENTS
- 1 cup blueberries
- 2 eggs, separated
- 2 cups sifted flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1 1⁄2 cups milk
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon salt
- 1⁄4 cup melted butter
INSTRUCTIONS
Preheat the waffle iron per manufacturer’s instructions. Then separate the egg whites from the egg yolks and place in two separate medium size bowls.
Beat the egg whites using an electric mixer and beat until they form stiff peaks and set aside. Then whisk the egg yolks until the yolks are uniform in color and texture. Set aside.
In a medium bowl sift together the flour, sugar and baking powder. Then slowly stir in the milk, beaten egg yolks and melted butter to the dry mixture.
Use a silicone spatula to fold in the blueberries. Now carefully fold in the stiffly beaten egg whites.
Add the batter to the hot waffle iron, filling each waffle no more than 80% full. Close the lid and cook per waffle iron instructions.
Continue to make your Homemade Blueberry Waffles until the batter runs out. Serve warm with maple syrup, whipped cream and/or fresh fruit.
