What Is Stew Meat?

Stew meat is a general term used to describe meat that is cut into small cubes or chunks, typically for use in stews. It is often made from tough cuts of meat with a lot of connective tissue, such as chuck or round roast.

This is because the meat is typically used in recipes that require a long, slow cooking process. When cooked for long periods of time the connective tissue has enough time to break down and make the meat tender.

However, when stew meat is sliced thin and against the grain, the meat will also become tender when cooked in a shorter amount of time. When looking for stew meat to make this easy beef stroganoff recipe, be sure to look for cuts that have a good amount of marbling.

This is because the fat helps to keep the meat moist and flavorful during cooking. However, if you prefer, you can use other cuts of beef that may be more expensive, but will ensure that your meat is super tender.

  • Boneless ribeye: This cut is well-marbled and flavorful, and it will cook up tender in minutes.
  • Sirloin: Sirloin is another good choice for beef stroganoff. It is leaner than ribeye, but it is still tender and flavorful.
  • Tenderloin: Tenderloin is the most tender cut of beef, but it can also be the most expensive. If you are willing to splurge, it is a great choice for beef stroganoff.

If you want to make it even more budget friendly, use ground beef instead using this Ground Beef Stroganoff Recipe.

6 Steps To Make Easy Beef Stroganoff With Stew Meat

Step 1: Prepare the Meat

Begin by seasoning the stew meat with a pinch of seasoned salt and a dash of black pepper. Place the meat in a large resealable plastic bag and add one tablespoon of flour.

Seal the bag and shake it well, ensuring that the flour coats the meat evenly. Set the bag aside for now.

Step 2: Sear the Meat

Heat the olive oil over medium-high heat in a large skillet or saucepan. Once the oil is shimmering and hot, remove the seasoned meat from the bag, shaking off any excess flour, and brown the beef in small batches.

Cook each side for 1-2 minutes until they develop a beautiful golden crust. Transfer the seared meat to a plate and set it aside.

Step 3: Saute The Vegetables

Reduce the heat of the skillet to medium and add the unsalted butter. Let it melt and then add the diced onion and let it cook for about 4 minutes, until translucent.

Next, add the sliced cremini mushrooms and minced garlic into the mix, continuing to cook until they soften, approximately 4-5 minutes.

Step 4: Make The Beef Stroganoff Sauce

Add the remaining two tablespoons of flour to the onion and mushroom mixture. Stir well and cook for about one minute, allowing the flour to combine and create a roux. This will be the base of your rich and creamy sauce.

Then add the beef broth, Worcestershire sauce, Dijon mustard, and dried thyme to the pan and stir. The sauce will begin to thicken and become brown in color. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 5 minutes.

Step 5: Return The Beef To The Pan

Return the beef and any accumulated juices on the plate into the pan. Continue to cook the beef in the sauce for 5 minutes or until the beef is cooked through and tender.

Step 6: Add The Sour Cream

Finally, remove the pan from the heat and stir in the sour cream until fully incorporated into the mixture. This is the secret ingredient that allows the Beef Stroganoff to take on that creamy look and it provides that iconic slightly tangy taste to the sauce. Finally, season with additional salt and pepper to taste.
