Crock Pot Mississippi Chicken Recipe

Ever since posting my recipe for Crock Pot Mississippi Pot Roast I have received a ton of emails asking if you can make the same recipe but use chicken instead of beef. And the answer is absolutely!

Chicken breasts are cooked low and slow in a crock pot with au jus gravy mix, dry Ranch dressing mix, butter and pepperoncini peppers. The combination of those 5 simple ingredients creates a unique and irresistible flavor that is hard to resist.

Once the chicken is cooked through it becomes so tender that you can shred it easily with two forks. Then mix it back in the juices and it is ready to serve.

Not only is it delicious, but it is also very easy to make. In fact, all you have to do is put the ingredients inside the slow cooker and walk away.

It is a true ‘dump and go recipe’ that requires only 5 minutes to prepare. And when you come home, dinner is nearly ready.

The chicken becomes so tender that it will easily shred. Then it is time to enjoy a delicious dinner that took very little effort.

5 Simple Ingredients To Make Mississippi Chicken

  • Chicken: You can use boneless, skinless chicken breasts or boneless, skinless chicken thighs for this recipe.
  • Au jus gravy mix: A packet of au jus gravy mix will add great flavor to your Mississippi Chicken. You can find a packet of the mix near the other seasoning packets at the grocery store. *Or use a packet of French Onion Soup Mix for less beefy flavor.
  • Dry ranch dressing mix: The same dry dressing mix that you use to season Chicken Bacon Ranch Casserole is used in this recipe as well. The flavor of the ranch dressing mix compliments the gravy mix perfectly.
  • Butter: One stick of butter adds a little fat and flavor to the chicken. Although I typically recommend using unsalted butter in most of my recipes, this is one time where salted butter is preferred.
  • Pepperoncini peppers: In order to get that slightly tangy flavor that this recipe is known for, pepperoncini peppers are placed on top of the chicken. Although this recipe calls for 6 peppers, you can use more if you prefer.

What Are Pepperoncini Peppers

Pepperoncini peppers are what makes both Mississippi Pot Roast and Mississippi Chicken have that unique and tangy flavor. The pickled peppers are added to the crock pot whole and can be sliced and served with the meat after it is shredded.

But what exactly is a pepperoncini pepper? Commonly known as golden Greek peppers, Tuscan peppers, or sweet Italian peppers, these peppers are a variety of chili peppers.

However, they are considered one of the mildest chili peppers that pack very little heat when compared to other types of peppers. Although you can eat them raw, they are most served as pickled peppers.

You can find them at the grocery store stocked next to the jalapeno pepper slices. The whole peppers are yellow to light green in color and each pepper is only 2-3 inches long.

They are often served as part of an antipasto platter and alongside pizza in many restaurants. However, because you are only going to use 6 peppers for this recipe, I have listed are some other ways that you can enjoy the remaining pickled peppers.

Other Ways To Enjoy Pepperoncini Peppers

1. Sandwiches: Add sliced pepperoncini peppers to your favorite sandwich for an extra kick of flavor. They go particularly well with roast beef, turkey, and chicken.

2. Pizza: Don’t just serve the peppers alongside your pizza, slice up a few and add them as a topping.

3. Pasta: Just like when slicing up a few peppers and mixing them into the shredded Crock Pot Mississippi Chicken you can slice a few peppers and add them to your favorite pasta dish as well. They go particularly well with red sauces including your favorite spaghetti and meatballs recipe.

4. Salads: Toss sliced pepperoncini peppers into your favorite salad for a burst of flavor.

5. Burgers and Hot Dogs: Slice up a pepper and top your favorite burger or hot dog to give it a tangy twist.

6. Rice and Grain Bowls: I have been obsessed with adding peppers to Baja Chicken Bowls. The taste and texture of the peppers go well with the other ingredients.

7. Eggs: Add sliced pepperoncini peppers to your scrambled eggs for a flavorful breakfast or brunch option.

These are just a few ideas to get you started, but there are many more ways to use pepperoncini peppers in your cooking. Experiment with different recipes and you might have just found your new favorite condiment!

How To Serve Crock Pot Mississippi Chicken

Mississippi chicken can be served in a variety of ways, making it a versatile dish that you can customize to your liking. You can serve it over rice, mashed potatoes, pasta or serve it in a bun.

However, you can also serve it as a stand alone main dish. Then pair it with a salad, steamed vegetables, and a dinner roll for a complete meal.

This recipe is also perfect for meal prepping, as it can be made in large batches and stored in the fridge or freezer for later. You can easily reheat it for a quick and easy meal during a busy weeknight.

How To Store & Reheat Mississippi Chicken

Storing Instructions:

If you have leftover Mississippi chicken, let it cool down to room temperature before storing it in an airtight container. Then place it in the refrigerator for up to 3-4 days or in the freezer for up to 3 months.

Reheating Instructions:

Oven Method – Preheat the oven to 350°F (177°C). Place the chicken in an oven-safe dish and cover it with foil. Bake for about 15-20 minutes, or until heated through.

Microwave Method – Place the chicken in a microwave-safe dish and cover it with a damp paper towe. Heat on high for 1-2 minutes, or until heated through.

Stove Top Method – Place the chicken in a saucepan or skillet with a little chicken broth or water. Heat it over medium heat, stirring occasionally, until heated through.

  • 1 packet au jus gravy mix (or a packet of dry French onion soup mix)
  • 1 packet ranch dressing mix
  • 1/2 cup salted butter (1 stick)
  • 6 pepperoncini peppers

Once the chicken is cooked through shred the meat with two forks and let the meat absorb the juices before serving.

INSTRUCTIONS

1. Add chicken breasts to the bottom of the slow cooker.

2. Sprinkle both packets of au jus gravy (or French onion soup mix) and Ranch dressing mix on top of the chicken.

3. Top the chicken with the butter and pepperoncini peppers.

4. Cover and cook on low for 6-8 hours.

5. Shred the meat with two forks and stir back in the crock pot to absorb the juices.

Notes

You can use fresh or frozen chicken for this recipe. You can also substitute chicken thighs for the chicken breasts.

For added heat, use more pepperoncini peppers and dice them up once the chicken is cooked and mix with the shredded chicken.

Serve the chicken in a bun, or over rice, cauliflower rice, mashed potatoes, or pasta.
