Chocolate Chip Ice Cream Sandwich Recipe

Nothing screams summertime more than a Chocolate Chip Ice Cream Sandwich! Although any cold and refreshing dessert recipe sounds delicious when the temperatures get above 80 degrees, this one is at the top of the list of summertime favorites at my house.

Cold and refreshing vanilla ice cream is stuffed between two homemade chocolate chip cookies. And if that wasn’t enough, the edges are rolled in mini chocolate chips which takes this dessert to the top of goodness!

It is an easy dessert recipe that both the kids and adults love. And it couldn’t be easier to make!

And it all starts with making Homemade Chocolate Chip cookies. Of course, you could also use store-bought cookies if you don’t want to turn the oven on.

Just be sure if you do, to purchase bakery quality chocolate chip cookies. Otherwise if you purchase the store-bought packages of chocolate chip or chocolate chunk cookies your ice cream sandwiches will be very small.

Although this might be a good option if you have to feed tiny mouths in your family. Or you can use them if you need to make several individual desserts to serve at your backyard cookout or birthday party.

However, for this recipe, I will give you the instructions for making homemade cookies if you choose that route. Regardless on how you decide to make them, I am sure that you will keep this recipe handy all summer long!

Chocolate Chip Ice Cream Sandwich Recipe

INGREDIENTS

Homemade Chocolate Chip Cookies

  • 1 ¼ cups unbleached all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 7 tablespoons unsalted butter, room temperature
  • ¾ cups brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1 cup chocolate chips or chocolate chunks

Ice Cream Sandwiches

  • Chocolate chip cookies
  • ½ gallon Vanilla Ice Cream
  • 1 cup mini chocolate chips

A silicone baking mat is a great investment and will save you money by not having to purchase parchment paper.

INSTRUCTIONS

The first step in making Chocolate Chip Ice Cream Sandwiches is to make the cookies. Start by preheating the oven to 350°F (177°C).

Then line a baking sheet with parchment paper or a silicone baking mat and set aside. I have fallen in love with my Silicone Baking Mats.

Not only are they easy to use and clean, they have saved me so much money by not using parchment paper. Parchment paper is not only expensive, it can only be used once or twice for baking or cooking.

Then you have to throw the paper away and start again. However, if you make a one time purchase of a Silicone Baking Mat, you can use it over and over again.

Once your baking sheet is prepared, set it aside and make the cookie dough for your ice cream sandwiches. Start by preparing the dry ingredients by adding the flour, baking soda and salt to a medium bowl. Whisk until well combined and set aside.

Now prepare the wet ingredients. In the bowl of a stand mixer fitted with a paddle attachment, or in a large mixing bowl that you can use with a hand mixer, add the butter, brown sugar and granulated sugar.

Then beat on medium speed until light and fluffy, scraping down the sides of the bowl as necessary. Make sure you mix longer than you think is necessary. It will take about four minutes for the butter and sugars to cream.

When you make your chocolate chip cookies, be sure to flatten the tops so that they don’t dome up when baked.

Now add the egg and vanilla extract to the mixture and beat until just combined, about 30 seconds. Then with the mixer placed on low speed, slowly add half of the dry flour mixture to the wet ingredients.

Mix until incorporated and add the remaining dry ingredients. Continue to mix just until the flour is no longer visible. Then fold in the chocolate chips or chocolate chunks with a silicone spatula.

Bake The Cookies

With a medium cookie scoop, scoop 2 tablespoons of cookie dough and shape it into a ball and place onto the prepared baking sheet. Repeat with the remaining cookie dough, placing each dough ball 1-2 inches apart.

Then using the back of a measuring cup, sprayed with non-stick cooking spray press each cookie dough ball down slightly. For Chocolate Chip Ice Cream Sandwiches, you want the cookies to be on the flatter side.

Next, place the baking sheet in the preheated oven and bake for 11-12 minutes or until the edges start to turn light brown. Then remove the cookies from the oven and let the cookies cool on the baking sheet for five minutes.

Once the five minutes are up, transfer the cookies to a wire rack to cool completely. Then transfer the cookies to the freezer for 20-30 minutes to harden.

Assemble The Ice Cream Sandwiches

Once the chocolate chip ccookies are cooled and frozen it is time to assemble the ice cream sandwiches. However, before doing so, be sure that the ice cream has had time to soften so that it is easily spreadable.

I typically use my Homemade Vanilla Ice Cream but store bought ice cream is perfectly fine to use as well.

Place 1/4 cup of the softened vanilla ice cream on the underside of one cookie. Spread the ice cream out evenly and make sure it goes to the edge of the cookie.

Then top the ice cream with a second cookie to make a sandwich. Squeeze the two cookies lightly so that they adhere to the ice cream, and so the ice cream pushes just past the edge of the cookies.

Next place the mini chocolate chips in a shallow bowl. Roll the sides of the sandwiches in the chocolate chips, pressing slightly so that stick to the surface of the ice cream.

Although you could serve them immediately, it is best practice to place the cookies in the freezer for 30 minutes prior to serving.

Once your roll the chocolate chips around the edges of the ice cream sandwiches be sure to press them lightly into the ice cream so that they adhere to the surface.

Storing Instructions

If you are making the Chocolate Chip Ice Cream Sandwiches ahead of time, place the prepared chocolate chip ice cream sandwich cookies in the freezer for an hour. Then wrap each one individually in plastic wrap.

Place the wrapped sandwiches in a larger, resealable freezer bag and store for up to 1 month in the freezer.
