French Toast Casserole – The Perfect Make-Ahead Breakfast

French Toast Casserole is one of those breakfast recipes I make again and again, especially around the holidays. When I’m cooking for family or guests, this recipe makes breakfast far more manageable.

It allows you to prepare everything in advance, it feeds multiple people at once, and it delivers the same comforting flavors as traditional French toast without standing at the stove flipping slices. Instead of dipping individual slices of bread into an egg mixture and cooking them one at a time, this casserole method lets the bread soak all at once in a lightly sweetened custard.

As it bakes, the mixture firms up into a soft interior while the top becomes lightly golden. Underneath, a layer of melted butter and brown sugar turns into a rich sauce that coats the bread as it cooks. The result is French toast that has consistent flavor and texture from edge to edge.

Why You Should Make This French Toast Casserole

This French Toast Casserole is especially useful for holidays and weekends when you want a hot breakfast without spending the entire morning in the kitchen. It also works well for meal planning because leftovers reheat easily and maintain their texture. Whether you are serving it fresh from the oven or warmed up the next day, the casserole holds together well and doesn’t dry out.

Another advantage of this recipe is that it uses basic ingredients that are easy to keep on hand. Bread, eggs, milk, butter, and brown sugar form the base, while cinnamon and vanilla add flavor without overpowering the dish. Because the ingredient list is straightforward, the recipe is also easy to adapt for dietary needs or ingredient substitutions without changing the overall method.

Before getting to the recipe itself, there are a few important details that affect how this French Toast Casserole turns out, starting with the bread.

Best Bread To Use

French bread works best for this recipe because of its structure. It has a firm crust and a soft interior that absorbs the custard evenly without breaking down. Bread that is slightly dry performs even better, as it soaks up the egg mixture without becoming overly soft or mushy during baking.

If time allows, I like to cut the French bread into cubes and spread them out in a single layer on a baking sheet. Letting the bread sit out overnight helps remove excess moisture and improves the final texture of the casserole. This step is especially helpful if the bread is very fresh.

However you can use other varieties of bread if French bread is not available. Sourdough holds up well and adds a mild tang to the overall dish. Brioche creates a softer, richer texture, while Italian bread offers a middle ground between the two.

Regardless of the bread chosen, slightly drying it out before assembling the casserole will produce the best results.

Gluten-Free and Dairy-Free Options

You can easily adapt this French Toast Casserole for gluten-free or dairy-free diets without changing the overall process.

Gluten-free French bread or gluten-free Texas toast are great options. As with regular bread, allowing it to dry out slightly before use will improve absorption and texture.

For a dairy-free version, replace the butter with dairy-free butter or coconut oil, and switch the milk to almond milk, coconut milk, or soy milk.

These swaps can are all at a one-to-one ratio. The flavor and texture remain consistent, and there is no need to adjustment the baking time or temperature.

*Specific measurements and complete recipe instructions are located in a printable recipe card at the bottom of this article. However, be sure to continue to read the tips and tricks to making this recipe below.

INGREDIENTS

  • ½ a loaf of French bread (about 8 oz) cut into cubes
  • ½ cup butter
  • 1 cup packed brown sugar
  • 6 eggs
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon divided
  • 1 Tablespoon brown sugar for topping
  • powdered sugar for topping optional

INSTRUCTIONS

Preheat oven to 425 degrees F. Butter a 13×9 inch baking pan and set aside.

In a small saucepan, melt the butter over medium heat. Once fully melted, stir in the brown sugar and continue stirring until the sugar dissolves and the mixture becomes smooth and glossy. Pour this mixture into the bottom of the prepared 13×9 inch baking pan and spread it evenly.

Add the bread cubes to the pan, spreading them evenly over the brown sugar and butter mixture.

In a medium bowl, whisk together the eggs, milk, vanilla extract, and 1 teaspoon of the cinnamon until well combined. Slowly pour the egg mixture over the bread cubes, making sure all of the bread is evenly soaked.

Sprinkle the remaining 1 teaspoon of cinnamon and 1 tablespoon of brown sugar evenly over the top of the French Toast casserole.

Bake in the preheated oven for 25 to 30 minutes, or until the top is golden brown and the center is set. Remove from the oven and allow it to cool slightly. Sprinkle with powdered sugar if desired before serving.

How Baking Temperature Affects The Texture

This recipe bakes at a higher temperature than some traditional casseroles, and that is intentional. Baking at 425 degrees helps the top of the casserole brown quickly while allowing the inside to set without becoming dense. The heat also helps the brown sugar and butter layer melt evenly, creating a sauce that coats the bread as it bakes.

Because ovens vary, it’s important to watch the casserole during the last few minutes of baking. The top should be golden brown and the center should no longer appear wet. If needed, the casserole can be tented loosely with foil near the end of baking to prevent over-browning while the center finishes cooking.

Make-Ahead and Storage Information

One of the biggest advantages of this French Toast Casserole is that it can be prepared ahead of time. The entire dish can be assembled the night before, covered tightly with plastic wrap, and stored in the refrigerator. In the morning, it can be baked as directed with no additional preparation.

Leftovers store well in the refrigerator for up to three days. Once cooled, the casserole can be covered or transferred to an airtight container. Individual portions reheat easily in the microwave, while larger portions can be reheated in the oven to maintain texture.

The casserole can also be frozen after baking. Allow it to cool completely, then wrap tightly with plastic wrap followed by aluminum foil. It can be frozen for up to three months.

To reheat, thaw in the refrigerator for about 24 hours, then warm uncovered in a 350-degree oven until heated through.
