Chicken Cobbler With Cheddar Bay Biscuit Topping

If you’re looking for an easy and filling meal to feed the family you are going to love this Chicken Cobbler recipe. With the help of a few simple ingredients, this meal comes together with very little effort.

And it all starts off with a rotisserie chicken. Every week when I had to my local wholesale club or grocery store I pick up a cooked rotisserie chicken.

I may use it that night as the main dish along with mashed potatoes and corn. Or I will remove the meat from the bone and use it in other dishes throughout the week, like in this recipe.

Then all you need is a bag of mixed frozen vegetables, cream of chicken soup, and a box of Cheddar Bay Biscuit mix and you have almost everything you need to make this delicious dinner. Best of all, it is a simple and easy recipe where you layer the ingredients on top of each other.

In fact, I had this meal made and ready for the oven in only 10 minutes! And that is exactly why I love to make this meal on a busy weeknight or whenever I need a comforting meal without spending hours in the kitchen.

Layering the Ingredients: No Mixing Needed

One of the best things about making this chicken cobbler is that you simply layer the ingredients in the baking dish without mixing them together. Start with melted butter at the bottom of your dish. The butter not only helps to prevent the cobbler from sticking but it adds a rich buttery flavor to the cobbler filling.

Next, spread diced or shredded rotisserie chicken evenly over the butter. Using leftover rotisserie chicken is a huge time-saver and brings a lot of flavor to the dish with very little work.

You can dice or shred the chicken, depending on your preference, but the key is to make sure it’s evenly distributed so every bite includes some chicken.

The Vegetables

The frozen vegetables go on top of the chicken, creating the third layer. Don’t stir them in—just spread them out so that they cover the chicken. Just be sure to break up any large clumps before spreading them.

This cobbler recipe calls for a 12-ounce bag of mixed frozen vegetables, which usually includes a blend of peas, carrots, and green beans.

You don’t even need to thaw them before adding; just sprinkle them evenly over the rotisserie chicken layer. The frozen vegetables cook perfectly in the oven, becoming tender without getting mushy.

If you prefer, you can swap the mixed vegetables for other options like frozen corn, broccoli, or even a blend of your favorite veggies. This makes it easy to adapt to your family’s preferences or use up what you have on hand.

The Creamy Base In Chicken Cobbler

On top of the vegetables pour the creamy mixture of cream of chicken soup, chicken broth, and seasonings over the chicken and vegetables. Although this layer adds moisture and flavor, it also binds everything together, giving the cobbler its creamy base.

The topping of this chicken cobbler recipe starts with a box of Cheddar Bay Biscuit mix. This is the same mix that allows you to make the famous rolls from a popular seafood restaurant chain. Although I sometimes make Homemade Cheddar Bay Biscuits from scratch, this pre-made mix comes in handy for this recipe.

To make the topping, mix the biscuit mix (minus the seasoning packet) with milk and shredded cheddar cheese until combined. Pour this mixture evenly over the other layers in the baking dish.

This biscuit mix not only brings a cheesy, buttery flavor but also adds a golden, slightly crispy top that pairs perfectly with the creamy filling underneath.

Adding the Finishing Touch

Once the cobbler is baked to a light golden brown and bubbly around the edges, it’s time to add one more layer of flavor. Use that seasoning pack from the Cheddar Bay Biscuit mix and mix it with melted butter.

Then brush this seasoned butter mixture over the biscuit topping right after you take it out of the oven. This step makes the topping even more delicious!

Let The Chicken Cobbler Rest Before Serving

After baking, it’s important to let the cobbler rest for about 10-15 minutes before serving. This resting time allows the filling to thicken slightly, making it easier to serve without being too runny.

To serve, scoop a portion onto a rimmed plate or bowl, and if you want, you can add an extra spoonful of the filling on top.

Perfect for Leftovers

Chicken cobbler also makes great leftovers. Store any remaining portions in the refrigerator in an airtight container, and when you’re ready to reheat, simply warm it up in the microwave or oven. The flavors meld even more as it sits, making the leftovers just as delicious, if not better.

INGREDIENTS

  • 4 Tablespoons butter, melted
  • 3 1/2 cups of leftover rotisserie chicken, diced or shredded
  • 12 ounce bag mixed vegetables (peas, carrots, green beans)
  • 10.5 ounce can cream of chicken soup, low-sodium
  • 2 cups chicken broth, low-sodium
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon pepper
  • 11.36 ounce Cheddar Bay Biscuit Mix
  • 2 cups milk
  • ½ cup shredded cheddar cheese

Topping

  • 2 Tablespoons butter, melted
  • seasoning packet from box of Cheddar Bay biscuit mix

INSTRUCTIONS

Preheat the oven to 350°F. In a large 9 x 13-inch baking dish, pour in the melted butter then tilt the baking dish so that the butter coats the bottom of the baking dish.

Place the diced or shredded chicken chicken evenly over the bottom of the baking dish.

Pour the frozen mixed vegetables evenly over top of the chicken layer. Set aside.

In a separate bowl, add the cream of chicken soup, chicken broth, garlic powder, onion powder and black pepper and whisk to combine.

Pour this mixture evenly over the chicken and vegetables. Set aside.

In a medium bowl, stir together the biscuit mix (not the seasoning – save that for the topping later) with the milk and shredded cheese until combined well.

Pour this mixture as evenly possible on top of the other layers in the baking dish.

Bake Time Required

Place the baking dish in the preheated oven and then let it bake for about 50-60 minutes until bubbly around the edges and the top is light golden brown in color.

Remove the baking dish from the oven. Set aside while you prepare the butter topping.

In a small bowl combine melted butter and the contents of the seasoning packet that came with the box of Cheddar Bay biscuit mix. Once it is well combined, brush this butter mixture over the top of the cobbler topping.

Allow the chicken cobbler to rest for 10-15 minutes before serving so that the filling can thicken up a bit. Serve by scooping a portion onto a rimmed plate or in a bowl. Add more filling on top of the serving as the filling can be on the thin side.
