Quinoa Bites

A delicious and healthy breakfast, snack, or dessert option for those who want to eat healthier!

Ingredients
  

  • 1 cup cooked white quinoa cooled
  • 1 cup quick cooking oats
  • 1/4 cup natural peanut butter
  • 1/3 cup mini chocolate chips dark chocolate
  • 1/4 cup maple syrup
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt iodized
  • 1/2 teaspoon pure vanilla extract

Instructions
 

  • Line a rimmed baking sheet with wax paper and set aside.
  • In a medium sized mixing bowl, combine all ingredients and stir until well incorporated.
  • Using slightly damp hands, roll the mixture into bite size balls. You should end up with 12-18 depending on the size.
  • Place the balls onto the lined baking sheet and place in the freezer.
  • Let them get frozen for at least 2 hours before eating. Store in an air-tight container in the freezer.

Notes

Once you are ready to enjoy, take them out of the freezer and let sit for 3-5 minutes before serving. Recipe courtesy of Make Your Meals
